Mine is equal measures of buttermilk and mayo, and then double of Greek yogurt, half the juice of one lemon, two tbsp of dried Parmesan, a teaspoon of dill, garlic granules, Maldon seat salt, onion powder, and cracked black pepper.

Makes that amazing ranch dressing you get on the side of fried shit in America and is great for pizza crusts but you can also make kids eat ANYTHING dipped in it.

I’ve watched my kids enthusiastically eat celery, radishes and green peppers which aren’t normally things they will eat raw.

I see a lot of you are in the Daily Mail today with your secret recipes

YummyInMyTummy · 30/10/2020 16:49

I’m loving lots of these, thank you!
I was going to try the cheats tiramisu this weekend but we’ve all been sick all week so not feeling up to it - postponed till next week!
I’ve been screenshotting lots of the suggestions on my phone, but I plan on copying & pasting into a Word doc on the laptop when I have time (& energy)!
I don’t want this thread to ever end! Sorry, nothing helpful of my own to add.

yvanka · 29/10/2020 12:58

Nandos salt in mash.

Mouldiwarp1 · 28/10/2020 20:48

@ColleagueFromMars I do the condensed milk ice cream with a (very big) dash of Cointreau. Keeps it very smooth and a bit softer delicious - melts quickly though.

Someone put a condensed milk key lime pie recipe upthread. I do similar, but with zest and juice of a couple of lemons.

Finally, in our family we always have zabaglione sauce with Christmas pudding - frankly no-one cares about the pudding, it’s all about the zabaglione!

AgreeableEagle.
Made your Philadelphia Chicken and Bacon Bake for dinner tonight, loved it! So easy and so tasty, might add some mushrooms too next time. Thank you x

Ddot · 27/10/2020 17:41

Picnic loaf. Large sourdough loaf, cut into slices but not all the way through. So you end up with an intact loaf still. Fry onion till caramelized put to one side, fried fresh tomatoes put to one side, boiled potatoes sliced, bacon chopped and fried put to one side. Grated cheese. Two large eggs whisked with splash of cream. Place loaf on tin foil lined baking tray. Stuff mixture in between slices evenly ensuring you get some in each slice, keep a little cheese for top. Carefully pour egg mixture down each slice and sprinkle remaining cheese on top. Make a bag with foil and bake till egg cooked. Open bag and let the top brown.

@steppemum and @ARoseInHarlem thank you both for your helpful replies re buttermilk. I will be trying it next weekend.

Tonight I'm making @Judystilldreamsofhorses chicken curry recipe

Gertrudetheadelie · 27/10/2020 17:00

I love everything about this thread apart from the impact it will have on my waistline! Grin

I can't add much apart from making potato bread with my leftover mash:

Add flour to mash until a dough forms.
Roll out until approx 1cm thick
Cook on a griddle pan for a couple of minutes each side.
Serve with butter.

Butter = everything amazing.

NUFC69 · 27/10/2020 16:47

I have made the Turkish Chicken Tray Bake from near the top of the thread: delicious. There were lots of vegetables left, so I roughly blended them and they made a tasty soup.

steppemum · 27/10/2020 12:20

Oh and I'm doing the slow cooker pork and apple!

steppemum · 27/10/2020 10:04

I have cut and pasted all my favourites from thsi thread, and when I meal planned for this week, I have included 2 of them, and a pudding.

So we are having the chilli and garlic fried salmon, (because dh and I will love that one) and the pigwheels, (because kids will love that one) and the cheat's creme brulee. (because if kids don't like it, I will eat it all...)

I'm alreayd lining up what we will have next week!

Ddot · 26/10/2020 19:41

Oh someone said a cup of filtered coffee added to chilli works well

ColleagueFromMars · 25/10/2020 17:32

Oh yum proper mint sauce!

TerpsichoreanMuse · 25/10/2020 16:20

For the best ever mint sauce, use muscovado sugar.

INGREDIENTS
200ml water
200g dark muscovado sugar
200ml malt vinegar
1 small bunch mint, chopped

DIRECTIONS
Bring water to the boil in a small pan. Stir in the sugar to dissolve, boil 5 minutes. Leave to cool completely before adding the vinegar and mint.

TerpsichoreanMuse · 25/10/2020 16:15

This is my recipe recreating the hummus we had in Egypt - much smoother and runnier than the standard stuff we get here. Still fine for a dip, or makes a great Middle Eastern salad dressing or sauce for grilled lamb. You do need a proper smoothie style blender, and use the green smoothie setting.

INGREDIENTS
1 tin chickpeas (drain the water and measure it in)
8 tbs water from can
3 tbs tahini
6 tbs good olive oil
3 tbs lemon juice
1 clove garlic (or three roasted)
Salt

DIRECTIONS
Pulse then blend.
Season to taste.

Tinned potatoes are pretty useful. I like to use them when making Cornish pasties. My dH loves them chopped up in a bowl of tomato soup.

Ddot · 25/10/2020 15:10

Fish pie. Poach mixed fish chunks including smoked and set aside. You can buy frozen bags of mixed fish. Make a white sauce (cheese sauce is nice too) place fish in bottom of pie dish, sprinkle with defrosted frozen peas, quarters of boiled egg and pour over the sauce. Top with mashed potato and grated cheese and bake till browning Prawns are nice in this pie too. I left an easy white sauce recipe earlier

ColleagueFromMars · 25/10/2020 13:47

So glad to see this in classics!

This is the no churn ice cream recipe I tried this summer and is now a firm favourite.

Double cream, 2 cups (I just used the container)
Condensed milk (standard tin)
Teaspoon vanilla extract

Whip the cream, mix in condensed milk and vanilla. Freeze.

Add flavours as you like - I rippled through salted caramel sauce and dark chocolate chips through one, strawberry jam and white chocolate chunks through another and good instant coffee granules and dark chocolate through another.

Ddot · 25/10/2020 13:24

Good for you x

SharedLife · 25/10/2020 12:50

Love, love, live this thread!

Today I added some horseradish sauce to my cheese sauce for cauliflower cheese and it was delicious! Not sure if that's a well known addition but it just suddenly occured to me that it would probably work and it did and we all really enjoyed it.

Ddot · 25/10/2020 07:24

I once made onion parcels, medium size onion peeled and a cross cut in top. Place on a square of pastry, put a knob of butter and a pinch of brown sugar on top of onion. Fold pastry up over onion and pinch to seal brush with milk put a tini slit bear top with knife for steam. Cook till pastry golden brown. Delicious but rather unsociable

LaMarschallin · 24/10/2020 22:48

Frittata. yes tinned potatoes are great to have in store cupboard I used when on lockdown. Yummy just fried with butter

They also make a very acceptable potato salad - particularly good if you're catering for a more people that you usually would.

billy1966 · 24/10/2020 17:52

@Ddot

When onions are abundant and cheap chop lots in quarters, place on tray lined with tin foil drizzle with oil (little) and sprinkle with brown sugar just a little, fold foil up to make a bag. Roast for 2hours or until brown and sticky. Put in pan and blend till smooth add drop of water if needed. Freeze in small bags or silicon muffin tray ( once frozen bag up) use for soup, stew, casseroles. Saves time and stinky house smell
Love that idea.
billy1966 · 24/10/2020 17:42

Oh the onions reminded me of this Italian dish.

Take 6 medium sized white onions, peel but leaving the root intact.

Into a pot creat a stock to submerge the onions in.

A veg stock cube, pinch of chilli, bay leaves, garlic cloves, juniper berries, star anise....anything to make a good flavoursome stock.

Submerge the onions and poach gently until cooked through and super soft.

Gently remove from the stock and place in a circle on an oven proof dish.....cover with lots of single cream and lots of freshly grated parmigiano.

This is a peasant dish but incredibly delicious and adored by anyone I have given it to.

I serve it with lasagne and a nice green salad.

Ddot · 24/10/2020 17:12
