Hello you lot! Morning

Straight to the point, anyone have a recipe for mince that isn't Spag bol or Cottage pie?

Have 500g beef mince from freezer that needs to go and need inspiration!

OP posts:
Are your children’s vaccines up to date?
crace · 12/06/2007 11:26

Oh dear, honesty the best policy? You are too tired, and not up to it?

Tired children today - dd and mindee 1 sound asleep and mindee 2 tired, but she doesn't nap anywhere but at home so all I am getting is a whining sound from her. cccrrraaacceee, cccaaaannn IIIII hhhavvvee.. You get the idea

could you or kbear get your OH to pick you up early???

madge7 · 12/06/2007 11:17

Then go, look fabulous and enjoy it!!
You never know they might not all be bald and sweaty and snubbing someone who is yummy is a real good feeling (if you want to snub that is....you know what I mean!!).

Wish I was bloody coming now!!

MaureenMLove · 12/06/2007 11:15

Bug no good - I walk to school with her every day! Kbear needs to have whatever I have too - she wont go without me and vice versa!

MaureenMLove · 12/06/2007 11:13

You've changed your tune - what happened to you'll have a blast Mo, life its for living Mo! Trouble is she's my friend and I have to go. Kbear is coming too and she doesn't want to go either! Anyway, enough of that.
I know the staff nurse in neonatal, I cm'ed both her kids, so thats a start. Shosh, made me think again about sticking with this job yesterday. There's not many jobs that'll let you do pretty much what you please everyday, is there? Just me hurtling twoards 40 in six months I think. Makes you take stock a bit.

soak · 12/06/2007 11:13

a slight croak in the voice sounds a bit more convincing as well...

fifilou · 12/06/2007 11:11

just remember to text her/call her in the morning to let her know youre feeling REALLY rough, and that youve been up all night vomiting. (god i sound a bit too pro at this)

soak · 12/06/2007 11:08

especially as you wouldn't want them to catch it and ruin the evening for everyone...!!!!

fifilou · 12/06/2007 11:08

ive just copied and pasted that recipe into word....me too im doing it tonight!

thanks!!!!

fifilou · 12/06/2007 11:07

soak · 12/06/2007 11:06

ooooh!! that sounds good!! I know what I'm doing for tea tonight!!!

fifilou · 12/06/2007 11:06

crace a recipe thread is a great idea. Im running out of ideas for fun meals.

ive exhausted my annabel carmel books, and fun recipes for kids menu!

spag bol and shep pie are getting a it dull!

soak · 12/06/2007 11:05

say you must have caught a 24hr bug from a mindee!!!!!

right! with regards to my bit on annual leave how does this sound??

I take up to 2 weeks unpaid leave a year, this is at my discretion. I will give at least 1 months notice.
If, however, our holidays co-inside this will still be charge at retainer price for the period you are on holiday. E.g. if my holiday is booked for 4th June ? 8th June and yours is booked 7th June ? 15th the retainer will be from 7th ? 15th but there will be no charge for 4th ? 6th.

madge7 · 12/06/2007 11:05

Crumbs that receip is long!! seems like a lot of faffinf, but really its fab and my freinds kids love it?? (go a bit easy on the chilli for them, haha!!)

Grab a granny night - my god girl, get out of it!!! Spend a lovely evening somewhere else!

crace · 12/06/2007 11:03

oooh oooh Jaffa cake please!!

Right then, meatballs.
I had a kids recipe for them but cant find it, see what you think.

MEATBALLS - serves 4/6 (and the rest its quite huge!)

900g/2lb mince meat
2 slices of bread
2 level teaspoons dried oregano
half teaspoon cumin seeds, pounded
half small dried chilli, pounded
1 tablespoon finely chopped fresh rosemary
1 egg yolk
salt and freshly grounded black pepper
4 tablespoons olive oil
1 tomato sauce recipe (will do in a mo)
2 handfuls fresh basil, picked and torn
60g/2ox mozz cheese, broken up
60g/2oz parmesan cheese, grated

OPTIONAL
1 onion, finely chopped
1 clove of garlic
i tablespoon olive oil
1 level tablespoon dijon mustard

Place mince in a bowl, Use the food processor to turn the bread into breadcrumbs. Add the breadcrumbs, dried oregano, cumin, chilli, rosemary and egg yolk to the minced meat and season with 2 level teaspoons of salt and a good twist of black pepper. At this stage you could add your optional ingredients (cooked together gently until tender and allowed to cool).

Mix well and with wet hands, roll and pat into meatballs, the size and shape you want. (These can be cooked strait away or or put in greaseproof paper, covered with cling film and refrigerated for up to a day).

Preheat a thick bottomed casserole dish to a very hot temp, add 3 - 4 tablespoons of olive oil, swirl around the bottom of the pan and add your meatballs. fry them till they are brown all over, being careful not to break them up but just moving the pan around so that all sides of the meatballs get nicely coloured.

Turn the heat down and cover with tomato sauce, loads of ripped up basil and a little broken up mozz and grated parmesan. Cook in over at 200oc/400of/gas 6 for about 15-20 minutes or until cheese is golden.

TOMATO SAUCE

This sauce can be frozen for up to a month or refrigerated for up to a week and is the basis of a lot of dishes.

SERVES 6-8
1 large clove of garlic finely chopped
2 tablespoons olive oil
1 small dried chilli, crumbled
2 teaspoons oregano
3 x 400g/14oz tins of italian plum tomatoes
1 tablespoon red wine vinegar
1 handful basil, roughly chopped
salt and fresh ground black pepper
2-3 tablespoons extra virgin olive oil

In a thick bottomed pan gently fry the garlic with the olive oil, then add the chilli, oregano and tomatoes. Mix gently but do not break up the tomatoes as this will release the pips, which will make the sauce slightly bitter - by leaving the toms whole and letting the mixture cook slowly you will get a lovely sweet sauce.

Bring to the boil and simmer gently for 1 hour. Add the vinegar, then stir and chop the toms in the sauce. Now add your fresh basil, season well tot aste, add 2-3 tablespoons of your best extra virgin olive oil.

Enjoy Ladies.

Mo, I am too old for that scene at the tender age of 29. Though I think it's my 18 mo dd that refuses to sleep that makes me too old for it I just couldn't muster up the excitment for that sort of thing - if I had free time, it would be curled up with a book in bed, and then a nap lol - lame

crace- homemade burgers, lasagne, chilli con carne (mild) erm..................

mo- i just caught up on yesterdays staff room after id lft, and you said you were thinking of a career change?

Just a word of warning about nursery nursing in a hospital (ive done this)- its very rewarding ith the children/babies, but you do get put on alot, you tend to work over your hours, and the pat is ok, but not fantastic.

like I say though, its very rewarding, and you learn so much. Its worth researching the hospital, the ward and the job.

katymac- whats curried meatloaf? sounds yum i reckon my charges would love that- whats the recipe love?

hello everyone else!

fifilou · 12/06/2007 10:56

eurggggggggggggggggghhhh!

Fake an ilness mo, get out of it anyway you can!

Eurgggggggggh! lots of baldy sweaty 50+ men lurking in dark corners saying 'hey babe, how you doin?'

Is that a sore ear you feel coming on?

Is it hurting?

MaureenMLove · 12/06/2007 10:52

But its grab-a-granny night!!!!! She told me. Even her dh calls it the knocking shop fgs! It's an over 35's night. Don't make me have to fend off grotty men, who have failed to get a girlfriend for 20 years. Just the thought of hot, sweaty, divorcees and singletons is making my skin crawl!

fifilou · 12/06/2007 10:41

morning!

Im bck form school runs and soing my jobs!

Ive got jaffa cakes!

mo- go girl! you will have a great time, and yes your head will hurt but get excited about it! find something nice to wear, have a few glasses of wine while you get ready, pop some cheesy 80s music on, and go have a blast!

Its so easy to get stuck into the stay in zone. lifes for living love!

Aw...go on!

madge7 · 12/06/2007 10:37

Has she said where you are going? Is it defo sleeze??

MaureenMLove · 12/06/2007 10:35

Its just this place is so far away from us, even if I wanted to go and come home early I couldn't. We're getting a cab too, so I feel like I'm totally stuck and also, will the damn cab turn up at the end. I'm not that old, well 39 and half! But I've done the staying out til at least 3 in the morning and going to sleezy clubs and I don't want to do it anymore. I'd rather spend the money & the evening elsewhere tbh. I will go though.[sob]
