Maria because it sounds beautiful and lyrical. Ines is OK but a little bit harsh.

Innes for a boy is lovely too.
Ines will get said as Eye-ns in the UK (as will Innes) by some.

Maria - I'm also in scotland and whilst I know a spanish female Ines, I know more men called Innes.
It also makes me think of Innis & Gunn beer (and yes, I know the spanish would pronounce it differently)

I love the name Ines on a Spanish woman. But here in Scotland it's very similar sounding the boys name Innes which is pretty popular (and a lovely name). I don't think I'd use it for that reason.
