It seems off to take an Irish name that is spelt phonetically and then bastardise that spelling.

but am never quite sure how it should be pronounced. The ones I know it’s basically like Amelia. But it looks to me like it should be eh-millia (as opposed to eh-meelia)

Emilia is ubiquitous? I don't think I've ever met one, and the only one I can think of is Emilia Fox.

But Amelias are everywhere and most people pronounce both names the same way.

…and as per PP, Niamh in Ireland is pronounced closer to Nee-uv.
