The adult one I know says Roo-bin but I’ve also heard it pronounced more like Roo-bun. How do you say it?

Maybe it depends on your accent, but in my accent it's pronounced with the same ending sound as Robin.

I’d say Roo-bən (where the ə is a schwa or unstressed vowel).

In Dutch and German it's Roy-ben

I've heard Rubin, Roo-bun and Rew-ben I've also seen the spellings Reuben, Rubin, Ruben and Rueben.
I'd pick a different name.

Roobuhn, the n tails off unlike in the word bun itself. Roobin makes me think of Billy Rubin/bilirubin!
