Poppy is quite cute sounding for me, so I'd give her a very classic, more timeless middle name - Elizabeth, Anne, Charlotte, Catherine, Alice, Julia, Lydia, Emma, Laura, Sarah etc

I'd avoid a filler middle name like Rose, May, Grace, Ann, Louise and Jane

What about a family name or your name?

I know an Amelia Poppy. Poppy Amelia sounds good.

I agree with the pp. I would avoid a middle name ending in y/ie and avoid another flower name.
