It depends, Jorge as in Jor-ge or Jorge as in Hor-hay?
I like Jorge the Portuguese way but not keen on the Spanish way.
So Jorge if it's like George but Nicolas if it's like hor-hay.

Is Jorge pronounced the same as George? If so, unless you're from or connected to a country where Jorge is the normal spelling, I'd go for George.
