What can Carrie be short for?

I'm not wild about Caroline and can't think of any others.

Or what do we think of Carrie as a standalone name, is it too nicknames/babyish?

I know a Carrie who is just ... Carrie! Its a lovely name. If that's what you like, go for it.

Carrie does make me think of an unpopular, bullied girl getting a bucket of pigs' blood chucked over her at prom... Sorry.

Had you considered Carey (as in Carey Mulligan, similar but more modern and without the above connotations)?

Carrie is fine as a name. A bit pointless to find a name you like then try to make it longer.
