They're both lovely. Really liked Dermot for our eldest, but in the end agreed that without the Irish connection people would think us very strange. Tried to get the 'D' sound in for ds2 (like the solidness of the sound for a boy) but dh wasn't having it.

My choices would be:
Brendan Joseph
and
Maeve Ellen.

I knew a Niamh-Anne growing up and I think the middle name Ann(e) smacks too much of the 60s. Maeve Ann also really does sound too like 'my van'.

I like the name Diarmuid, with Irish pronunciation more than Dermot.

Isn't Mary Ellen a Walton?

Have you try the shouting them for their dinner? See which sounds best at volume!

Also Maeve Ann when said quickly sounds like my van...

Dermot makes me think O'Leary, which is a good thing! Joseph is lovely too. I prefer Maeve from your girls names but like Mary too.

I don't really like Brendan or Dermot but I do love Joseph utterly and completely.

I'd have to say Joseph with Dermot as mn (as long as your surname isn't O'Logical).

Your girls names, ummm, I'd have to blindfold myself and stick a pin in, they all seem of a muchness. Even Maeve doesn't excite me.

I really dont like Dermot. Hard and dated. Diarmuid is slightly better, but there are much nicer Irish boys names out there.

Squoosh we are very sensible

People would expect it from us I think. Even the last baby, they were like 'ah, thought so' with baby name.
