AIBU to ask for your favourite seasonal baking recipes so I can bake for the office? I haven’t baked in forever but really fancy it this weekend!

Scottish Black Bun.

delicious

That looks interesting!!!

I want to do a cinnamon and brown sugar sourdough but that one isn’t that easy to bring into work!

I have used either. If the mixture seems a bit wet, I just add a bit more flour until it's stiffer. I forgot to add that I bake it in the middle of my fan oven on 180°C. The time is approximate, obviously, till a skewer shows it's done.

It's very moist, cinnamony and appley! 😋

That’s a good idea!

I love an apple cake, I always struggle with it becoming quite wet though when baked. Do you use cooking apples?

I like apple and cinnamon cake, although I haven't made it for ages.

It's basically a Madeira cake recipe with added apple and cinnamon (obviously!).

8oz SR flour
5oz butter, softened
5oz brown or Demerara sugar
3 eggs
1 large apple (or 2 smaller), finely chopped (no need to peel)
1 tbsp ground cinnamon

Mix everything except apple together (I just whizz it all with electric beaters). Stir in chopped apple with spoon.

Bake in tin for 45 minutes to an hour or so, until cooked through, covering the top with foil if it browns too much too soon.
