Doing a Mexican dinner party tonight and have started the prep.
I'm doing a cold mexican rice salad. So far I have (packet - don't judge me) rice, radish (advised by google), red pepper, red onion.
Q - I'm thinking of adding some spinach and maybe some mango??
What do you think?
Ps - no beans allowed due to one of the guests.

I’d add tomato only, no mango or spinach, and definitely no coriander (it tastes like soap to me and ruins any dish).

To me coriander is the work of the devil and tastes like soap. Please check with the guest first.

Totally agree. Not that I've seen it mentioned but capers are disgusting too.

No mangoConfused

TheOnlyWayIsIlford · 01/09/2026 19:57

Check the ingredients of the Mexican Rice.

The one I have used has beans in it

vincettenoir · 01/09/2026 19:54

I don’t think spinach goes with the Mexican theme. As for mango I could take it or leave it but I prefer it in Asian salads. There’s a lot going on in that rice salad already and I wouldn’t be that keen to add anything other than maybe lime or coriander.

Add some diced avocado with a squirt of lime juice.

LittleGreenShoots · 01/09/2026 19:00

Yes to the mango salsa. No to putting it in the salad.

Shinyhappyapple · 01/09/2026 18:58

Sweet corn and avocado

RumAndCola · 01/09/2026 18:17

I almost always do mango salsa with Mexican style dishes, my teens love that and street corn salad.

Is it a no to spinach and mango?

Mango is fine in rice dishes generally, especially spicy ones, but it will make it seem less Mexican I think. It's not really an ingredient you tend to get in Mexican dishes.

EmailsaysOOO · 01/09/2026 17:52

I wouldn't use spinach. Possibly some mango if properly ripe but not too soft

MsPrufrockk · 01/09/2026 17:49

I often serve a mango salsa with Mexican food (mango, red onion, lime, coriander, tomato), so I think why not??

I put a little bit of raw spinach in 😱😁🫣
but no mango. 😢
pic attached.

Looks lush! Fwiw I'd have said yes to the mango but no to the spinach personally.

SereneGoose · 01/09/2026 17:35

Lime, more Lime and then some lime

I do a nice mango chilli and prawn salad, with rice 😬

TheGirlWhoLived · 01/09/2026 17:30

I’d have optional jalapenos and coriander (and refried beans) for people to add their own! I personally absolutely love both

Maybeitllneverhappen · 01/09/2026 17:27

Red peppers, but no coriander. I love it but about 50% of people don't!

TheLambtonWorm · 01/09/2026 17:27

Mango is actually really nice in a rice salad, you quite often get mango salsa too so it would go well with the tex/mex theme imo. A cumin vinegar dressing is what we usually add. I wouldn't bother with the spinach though.

likelysuspect · 01/09/2026 17:25

Spinach is too earthy and has a funny texture on the teeth.

pinkishtongue · 01/09/2026 17:23

I wouldn’t put spinach in that, I’d do some toasted sweetcorn and chopped avocado, plus finely diced tomatoes, coriander and lime.

Urrrrmlik3okay · 01/09/2026 17:15

That does not sound good.

Just salsa and guac are fine

101Alsatians · 01/09/2026 17:14

Save me a plate please :)

But no thanks re:spinach, not sure would work.

I think spinach is going to make it a bit wet OP.

MyDeftDuck · 01/09/2026 17:08

Please don’t add spinach!!!! Food of the devil, up there with asparagus, avocado, olives, caviar………sure there’s more that gives me the heeby jeebies!
