When we were children, our favourite thing was a bowl of Mashed potatoes, dip in the top which you fill with butter.
You have to eat around the butter, so it doesn’t gush out. But at the end, you have a spectacular butter waterfall and last spoonful of potato. Yum! Last one to breach the butter was the winner!

You can do the same with fish cakes , the nice cheap ones that are mainly potato. Make a big indent , fill with knob of butter and let it melt . The circular nature and breadcrumbs give it that little bit of stability so you can take a bit of melted butter with each bit of fish cake .

I love me a spud or two! I went out for a meal a couple of weeks ago and had roast pork belly with cider sauce, braised root veg and colcannon. Honestly, it was so good I nearly wept tears of joy onto my plate. I can never get colcannon to taste so good at home, but as the more discerning members of my family will readily admit, I do a mean Hasselback. My parsnip and potato mash with creme fraiche and grainy mustard is not to be sneezed at, either. And now I'm hungry.

The right potato for the cooking method, roasts in lard, cream and horseradish in mash, oiled and salted kings for jackets, beed dripping chips, bubble and squeak, farls... wonderful!

Me too. I had a jacket spud today for lunch. Scooped out the potato, mixed that with butter, cheese, salt and sour cream, tore the skin into four bits and put some butter, cheese, salt and sour cream in each bit, folded them over and had delicious crunchy mini spudskin sandwiches on the side. God it was good.

I then had a nap.

I absolutely love potatoes.

I like to get the skin of a baked potato and fill it with butter and cheese and squash it all and eat it hot and drippy. (This is in addition to the butter and cheese that was originally part of the baked potato and I have no regrets and no shame.)

I got a potato ricer for Christmas and used it for the first time tonight, made some really delicious mashed potato…the rest of the dinner was just the support act for the real star of the show. All hail the potato!!!

Oh yes. Mash. Mash with gravy. Mash with cheese. Mash with butter. Fried with fish to make fish cake. Topping beef or lamb for cottage or shepherds pie. With sausages. With pie
Roasted with beef dripping, or in a tray bake, roast with gravy.
Baked with tuna, or cheese, or beans.
Chips with fish. Or curry. Or gravy. On a butty.

When i feel posh - dauphinoise.

Bloody love potatoes. Sam Gamgee would be proud.

Almost. Mash is the waste of a perfectly good spud and I make no apology for this.

Nah. It's the perfect use for a really good spud.

Just saw this as my potatoes are cooking. My husband is out for the evening , and although it is still 28 degrees, I am having a big BIG bowl of mash with garlic butter, then a big divot in the top of the mound , filled with butter to melt.. and a healthy (large) ladle of my homemade gravy that is currently defrosting ..may need micro to speed it up. YUM.

This is similar to watching Wuthering Heights in the UK (for me)

Are you familiar with the work of Poppy Cooks on Tiktok? It’s the potato equivalent of sporn.

I’ve seen a recipe that has squashed potatoes which are fried and have some sort of sauce poured over them. It is the stuff of my dreams.

Mmmm had my first bag of Charlottes this week, with melted butter or even without they are fabulous

Also I when I make jackets I put some small ones in the oven too, to be eaten cold the next day, almost better than a hot buttery one
