Made the lasagna without the lasagna

Brainfogtothemax · 05/01/2026 13:26

What to do?

Just prepped for dinner, did all the mince with tomatoes, onion etc and made the cheese sauce, boiled some potatoes and went to get the lasagna sheets and don’t have any.
Not feeling 100% so cba going to the shops, how can I make it into a proper meal? I have some pasta I could use instead, but what about the potatoes? Save them for tomorrow 🤷🏻‍♀️

I use croissant dough in mine when I have no pasta

I miss the laugh icon so much.

JohnBullshit · 06/01/2026 18:30

I really like a bit of bechamel or cheesy sauce with mash. I wouldn't rule out boiled (new) potatoes with a shop bought lasagne either, so I kind of get where OP was coming from there, but I've always accepted I'm an oddball on that front, and wouldn't offer it to anyone else.
OP, I hope you're feeling better today. If you find yourself in a similar position in future, pasta bake with whatever shapes you have in, and fry up the potatoes as a side.

Iamgettingolderandgrumpier · 06/01/2026 18:30

My son’s Italian mother-in-law rarely uses lasagna sheets, just layers any pasta with bolognaise and tops with bechamel sauce.

Not really feeling it tbh 😂

I’ll admit it doesn’t look like fine dining material but I’d absolutely smash it

Also I’ve only just registered your username and I feel it really does explain a lot

Should i pour the bechamel over the mash?

🙄

Definitely potatoes. Italian moussaka.

This is the most ridiculous post ever. Where has your common sense gone ??

Lasagne is a fundamentally Italian dish and there isn’t actually a huge amount of variation. The north uses bechamel with parmesan and the south uses ricotta.

I was commenting on the uproar that OP didn’t know you don’t use cheese sauce in lasagne. Which is actually totally untrue.

Edited

Not according to my phone it isn't lol 🤣

Yes! Of course, heat the milk with it to heat it up, forgot, thank you 🙏

Thank you for this thread, I've been grinning and chuckling at the comments 😂
Came to say I love your name, it matches for this reply especially 😆🫣
I get awful brain fog too.....

I had to ask my phone about the cheese in a Bechamel sauce and it doesn't include it. It becomes a Mornay sauce but honestly.... Who really gives a fuck??
Cheese or no cheese 🤷🏼‍♂️ it's a sauce for lasagne.

The mash idea as layers is a good one.

I don't have any further ideas (and realise that this was started yesterday).
I just wanted to tell you that you have a fan here 😁

It's almost as if there's not a single recipe for this ancient (not solely Italian) dish that has been influenced by lots of different cultures, trends and access to different ingredients over the centuries...

Bechamel sauce in lasagna layers and Parmesan cheese grated on top.

Blades2 · 06/01/2026 18:01

I love how you think the suggestion of a shepherds pie lasagne is weird. But not that buttery potatoes with lasagne is? 😂

What-mash and the pasta too? -seems weird

Isn’t that what you were planning anyway - potatoes and pasta too?!

Aluna · 06/01/2026 17:34

In Italy the recipes sprinkle the bechamel sauce layer with Parmesan - making a kind of cheese sauce once it’s baked in the oven.

I always thought the English version with just white sauce was really odd.

It was yesterday, and tea has now been eaten.

Phew - we can all sleep easy tonight :)

Please for the love of God, instead of asking on here and wasting time. Do any of the following:

  • Go to the shops and buy some lasagne sheets.
  • Make it into a pasta bake al-forno (basically mix with penne or whatever and bung in the oven).
  • Have it as a spaghetti bolognaise.
  • Mash the potatoes and make into an Italian style cottage pie.
  • Freeze the white sauce and use at another time.
  • Use the mince tomorrow and do something else tonight.

I honestly don't know why i'm so invested in this!

Just popping in to be peak Mumsnet and say M & S sell bags of frozen sofrito, which are really handy, especially for certain disabilities. I am epileptic for example so don’t use sharp knives and they’re great, they also do frozen chopped onion.

Loving this thread.

So do Tesco, for half the price

FlyingApple · 06/01/2026 14:55

Just wanted to say that I've enjoyed your responses OP 😂
It's not that crazy weird and I have been known to put cheese in my lasagne sauce before just go get in more cheese.
I hope you make your lasagne soon and send us a picture.

Lol, loving all the 'you need sofrito, it needs cooking down, you should add x or y to it, you cant reheat potatoes more than once' purity

then coming in with a curveball like beetroot and mushrooms and making out they're a common ingredient in bol!!!

Why don’t you try googling whether or not ragu ever has beetroot or mushrooms in it.
Have you never heard of “hidden veg” when you’ve got young kids? Or cooking more for winter veg if you grow your own? It’s basically a pasta bake with a veggie based sauce.

Wheras lasagne does not have cheese sauce, ever. And heating and cooling food over and over is what allows more and more bacteria to grow, if not stored and cooled properly or heated to the correct temperature. It’s basic food hygiene and safety.

sweetpickle2 · 06/01/2026 11:33

Sorry for previously suggesting this was a wind up post OP, you've been a great sport and who cares how anyone cooks their lasagne! Hope you enjoyed your potatoes.

Damnloginpopup · 06/01/2026 08:49

I like mushrooms in my Bolognese ragu and sometimes add peppers but do not like wasting wine in it.

According to wiki:

"Lasagne alla bolognese is layered with ragù (a thick sauce made with onions, carrots, celery, finely ground pork and beef, butter, and tomatoes), béchamel sauce, and Parmesan cheese."

Now...I don't generally put carrot or celery in, nor do I add butter, and I use cheddar not parmesan. Usually just use beef mince too. Tinned tomatoes and tomato puree instead of fresh tomatoes too. I make a lovely lasagna but now I realise it's something completely different.

Still don't eat potatoes with it though. Rather think I should try it.
