I’ll go first:

lentil & smoked bacon soup with bread

slow roasted tomato & garlic pasta with parmesan (literally chuck tomatoes & garlic in the oven for an hour, boil pasta, throw into tomatoes, add copious amounts of cheese)

@latteloverr haha, thank goodness. I really hate overcooked rice though. Like it has to be just on the brink of cooked!

latteloverr · 03/10/2024 23:08

It's a joke of course I cook the rice.

BobbyBiscuits · 03/10/2024 23:07

Baked salmon parcels, 12 mins. Add seasoning, tomatoes, oil, lemon, herbs- whatever you like and wrap in foil. Cook in oven on gas mark 6.
Then I just make boiled new potatoes and broccoli with it. And serve with mayo and more lemon and capers.

Pizza from Sainsbury’s. Follow instructions on packet.

Cowboycorgi · 03/10/2024 22:55

Potato waffles with beans & a fried egg. Lots of brown sauce.

I think I have a different idea of what constitutes an easy dinner 🤣

Me too! It's beige, is flung in the oven and has nuked veg added to it.

Bacon and blue cheese pasta
Dry fry pancetta/bacon bits, add garlic, blue cheese, peas, creme fraiche (sometimes mushrooms) mix into pasta.

Smoked salmon pasta
As above, with smoked salmon and no blue cheese. I sometimes do it with smoked haddock too.

Chorizo and goats cheese. Same idea only with red pesto, courgette, peppers. Creme fraiche optional (we mostly don't), stir through gears cheese

I just have raw rice with butter and salt on the top. The kids hate it but I don't care works for me.

I could do this. Cherry tomatoes? drizzle with olive oil?
