What cheese do you use on your lasagna top?

Boring question alert 🚨

Had a 10 year old admonish me for using cheddar cheese last night! Her mother only uses buffalo mozzarella and Parmesan don’t you know.

I’ve always just used whatever cheddar we have knocking around as I really don’t like the after taste of Parmesan and find mozzarella bland. I know it’s not authentic

i think my lasagna is gorgeous.

I like to use a bit of ricotta to top it.

Mine does (Italian parents and GP, generations ad infinitum and all use the same recipe).

People travel countries for my lasagna 😝

What’s the recipe then?

FanofLeaves · 30/08/2024 16:56

Recently I’ve taken to making my white sauce and then chilling it. The thicker consistency means it’s easier to smooth on, similar to how it would be in jar form if you buy your white sauce from a supermarket. I layer it on to the cooled down meat mix. If everything is warm it just mooshes together and the sauce seems to disappear when cooked.

I can assure you that my very Italian MIL does make it with mozzarella! But like many Italian recipes there are a lot of regional variations.

Indeed, but..... Emilia Romagna is the origin, and as I was taught by my very Italian DM, has only bechamel and parmigiano, and should be made with fresh egg lasagna, preferably green, but sadly you can't buy that here.

BitOutOfPractice · 30/08/2024 16:40

Forget relationship advice and parking disputes, I’m here for the lasagne cheese.

Surely she means mozzarella not buffalo mozzarella though? Wouldn’t buffalo mozzarella go weird if it was cooked?

(I use cheddar).

Why would you think that? Of course you can cook buffalo mozzarella.

mathanxiety · 30/08/2024 16:07

Provolone, muenster, cheddar - depends on what I have in the fridge.

I add parmesan and red pepper flakes at the table.

Why would buffalo mozzarella go weird if it were cooked? It's just normal mozzarella made from buffalo's milk.

CloudywMeatballs · 30/08/2024 15:34

Well it's not authentic, but as long as you and your family enjoy it that's all that matters, and that's what I would have told the ten year old.

The only cheeses I've ever used in lasagna are ricotta, mozzarella and parmesan. I feel like cheddar would change the taste and take it in a non-Italian direction. But, if you're not going for authentic and like the taste, don't worry about it.

Vintage Cheddar, lots of it, and make cheese sauce with Cheddar instead of Béchamel. My lasagne is fabulous and I’ve never had anyone not want seconds. I don’t care that it’s not authentic.

samedifferent · 30/08/2024 15:19

Although my lasagna usually has ricotta if it has a cheese with a little Parmesan on top for crunch.

samedifferent · 30/08/2024 15:17

I am basically with the dc. I love cheddar but don't use it on a lasagna.

Funnywonder · 30/08/2024 15:13

Margot2020 · 30/08/2024 13:06

An authentic lasagne is made with béchamel sauce, no cheese topping at all. So mozzarella isn’t authentic either, but I suppose at least it’s Italian. Like all Italian cuisine, British versions are quite different, but at least a cheesy topped lasagne is tasty, unlike some of the bolognese abominations you hear about on here!

Yes, just bechamel sauce here. No cheese. I eat plenty of cheese elsewhere, so I like the absence of cheese in a lasagne.

Rory17384949 · 30/08/2024 14:39

Whatever really, mozzarella if I have it but cheddar if I don't!

TomatoSandwiches · 30/08/2024 14:32

I don't like mozzerella in lasange as I prefer it to cut neatly, the cheese pull is fine for pizza but not lasange imo.

BabaYetu · 30/08/2024 14:31

I’m with your 10 year old! Cheddar is a superb cheese, but not on lasagna nor pizza.

Depending on what’s in the fridge, Parmesan, Gran Padano or Pecorino and some mozzarella.

We never have fewer than 6 types of cheese in the fridge because cheese is the best food.

TomatoSandwiches · 30/08/2024 14:30

Cheese in bechamel is mornay sauce, which is what I use 90% of the time using parmesan and gryere if I have any in but I also add finely chopped chives in the sauce.

I sometimes use ricotta with pecorino, parm and a beaten egg, it's very rich and indulgent.

CastlesinSpain · 30/08/2024 14:26

Plain bechamel with a sprinkle of parmesan. However bechamel is quite flavoured anyhow, with the onion herbs etc. that you are supposed to use. It's not a simple white sauce.

BurbageBrook · 30/08/2024 14:22

Mature cheddar every time.

MinervaMcGonagallsCat · 30/08/2024 14:18

60g of cheddar in the béchamel and then shavings of parmesan over the top

FeralNun · 30/08/2024 14:16

LouH5 · 30/08/2024 14:08

I put mozzarella on top of every layer of béchamel as I love the soft, gooey, stringy texture it adds once it’s been cooked. As it doesn’t taste of much, I then add cheddar on top, so I’m getting the best of both worlds!

I do this, but use Parmesan instead of Cheddar on top.

I wouldn’t turn my nose up at Cheddar though, if I’d forgotten to buy the Parmesan. In fact any cheese! It’s all very delicious..

SquigglePigs · 30/08/2024 14:14

I can't eat bechamel so I use a mix of cheddar and mozzarella, although I will just use cheddar if it's all I have in.

TheOnlyCherryOnMyTree · 30/08/2024 14:09

Just mozzarella. I'd put cheddar too but dh and dd don't like cheddar.

The best lasagne I have ever had is the Mary Berry one (made by me 😂).

Authentic Italian lasagne do not contain mozzarella.

Mine does (Italian parents and GP, generations ad infinitum and all use the same recipe).

People travel countries for my lasagna 😝
