Thought this would be nice and we can maybe share recipes?
Made these cakes for the children today using marshmallow frosting (aquafaba).

Is it the buttercream using veg suet? It's basically your usual buttercream recipe but with equal amount of veg suet. I also add vanilla and use soya cream instead of milk Smile

Some cupcakes I made yesterday for my daughter and her friend. Rainbow sponge with buttercream. If you use a small amount of vegetable suet in the buttercream it holds and sets amazing plus it halves the sweetness.

My first time making cashew cream for my pizza! It was SO good ! Like how I remember having ricotta on a pizza !!! I never realised how easy it was either !

I also put a bit of Morrison's own vegan cheese on, tomato base, vbites ham, pepper, mushrooms, onion and sweet corn. With some paprika , mixed herbs and ground pepper.

This was my cheat meal for the week !

Sweetcorn fritters (I added cheese and nutritional yeast and mixed with soya cream). We add nutritional yeast to everything the children have and their b12 levels and iron are very high.

I have sweetcorn ready to make fritters today @IveGotAlpen!
Thank you @aliensprig I just wing my seitan to be honest. I base it around 2 cups of seitan whatever herbs that are suited to the style (I actually chucked in some gravy granules to give a meaty taste). Then in a jug I mix the wet stock with a 1/4 cup of oil, dash of soy sauce etc. Mix it all then wrap tightly and chill for at least an hour. Then I boil it in stock for 2mins. Again let it chill for at least an hour then slice and fry. You can also pull it apart to make chunks. For chicken style I add lemon juice, black pepper, onion powder and thyme.

@PurpleDaisies it's roughly this recipe but instead of cauliflower I mash a large jacket potatoe with a dash of vegan cream. I also add 50g vegan butter and about 30g of cheese. I brush the top also with the 'buttermilk'and sprinkle sunflower seeds.
