Cooking on induction

Do you all like it? Why? Does it compare to gas?

My next property (hopefully) has no mains gas so was hoping to use calor gas. DH says he'd like induction as it's less of a faff.

Looking to hear all opinions please!

Mine is a neff induction hob not the cheapest one N70 I think it was but an N90 I think which is brilliant, very responsive.

I think there are inductions and inductions if you know what I mean. Some are better than others.

No doubt true. But equally, in my experience cooking with calor gas is very different to having mains gas. I get the impression that most of those who favour gas here are specifically talking about mains gas. OP doesn't have that option. The question is, how does induction compare with Calor (plus it looks like OP has already decided!).

Which are the best brand induction hobs in everyone's opinion, I'm hoping to move to a bungalow where there isn't any gas on the estate, the heating & hot water is powered by the burning of waste by the refuse collections & you just pay a basic fee no matter how much heating you use.

Definitely gas for me. Induction in my experience and also based on these comments seems very pot luck/hot and miss. Mainly actually pretty much 90% miss for me on all the inductions I've ever cooked on. Over complicated. I've had induction hobs where the glass got stained/scratched and on 1 cracked. Gas = straightforward, you always know what you're getting and a flick on and you're away.The latest more streamlined, stylish designs of gas hobs look fab.

My cast iron one takes ages to heat up on induction

My mil gave me an ancient Le Creuset cast iron grill pan. It heats in seconds.

We have induction and it's brilliant. Ours wasn't even expensive (£300ish I think), it has great control, the boost setting is really helpful for quickly boiling things and like everyone else has said it's easy to clean too.

We moved house and have inherited an induction hob (only ever had gas before). It is the only induction hob I've ever used, and is quite an expensive Neff model which may make a difference, but I love it. I can cook anything on it, including stir-frying, griddling steak and making gravy. Never a dirty hob waiting to be cleaned as it literally takes five seconds to wipe. The only thing I don't like is if there's a power cut, we don't have a hob.
Honestly, there's not a chance I'd get anything other than induction now.

I love my induction hob and I was a huge gas lover before.

The thing is though to get used to yours. In the first few weeks it was awful as it would turn off or boil over. Then I figured out what you have to match the pan to the circle and that it boils much quicker than expected.

Zero issues now.

@Iknewyouwerewaitingforme

Much prefer gas- just so simple and non faffy. Have found cleaning inductions a nightmare and so difficult to control- just turns itself off constantly. Its actually a turn off for me if for eg. a holiday rental has induction, my mum feels the same. Gas all the way! There are some lovely recessed gas hobs now that sit flush with worktop so they can look just as nice as inductions too imo.

How is cleaning it a nightmare? It’s a slab of glass.

Another convert from gas and I love induction. Controllable, easy to clean, what's not to like. I agree with a previous poster on here there's probably varying standards of hob. I have a Neff one and have never had the problems that someone else here listed.

My induction hob was the worst £750 I think I've ever spent. It's Groenje by Starck and just done a quick search and it's been discontinued so am prepared to say it might be the particular one I bought but I can't stand it. At the low end of the temperatures the gradations are far too large so impossible to get a good simmer, it's useless with big pans as it doesn't heat all the way to the edges of them and I've chipped it multiple times taking off and putting heavy pans on it.

I'm moving in a few weeks and replacing the kitchen can't wait to get back to a gas hob.

@Pasithea

Hate induction soooooo much. No control over temps. Either too hot or cold. Hate it.

Ours is every bit as controllable and responsive as gas. It’s a Neff one

Oh I love it! It’s amazing. I’d never go back to gas.

I'm amazed at the comments there, as have also always favoured gas by a mile. Whenever we've stayed anywhere with induction its near ruined the experience of cooking- asIknewyouwerewaitingforme says they constantly would turn off mid cook making for eg. boiling water/cooking pasta a nightmare . One holiday cottage we stayed at- boiling water ran all over induction as temperature was literally going from hot to cold- then the water stained the thing so badly we had to watch all these youtube tutorials/spent AGES trying to desperately get it clean before we left!! I clean our gas hob in a few minutes- no idea where the its hard to clean comes from. So many comments saying "love induction…well apart from cooking a wok...or a griddle pan" just seal the dal for me- why on earth would you want a cooker you can't cook a lot on?!

I’ve been using induction for 90% of my cooking. I love the simmer, boil and stop, slow cook and especially the timer function. At busy times I can just just set my manual pressure cooker on minimum induction with the timer and walk away. It’s brought a noticeable improvement to my life!
One thing that doesn’t work well is for steak pan or griddle searing. My cast iron one takes ages to heat up on induction and consumes a lot of power to do a mediocre job. And the induction-only griddle pan I bought was crap. No chargrill lines at all, just sort of boil fried. Not good when you’re buying expensive steak.
And putting the oven roasting pan on the hob to make gravy doesn’t work either.
But the advantages above still make it a good choice.

Ok, I would have thought an iron or steel wok heated up evenly due to the magnetic field or something but maybe not.

But that’s not how woks work - the flames come up around the outside of the wok so that all surfaces are hot and the food cooks quickly. A flat bottomed wok wouldn’t work.
I do a lot of stir frying so I’ll be sticking with a gas hob.

Our wok is carbon steel with a flat bottom so would work fine on induction hobs except for being old and warped. You must be able to buy a flat bottom wok.

Love induction. I can make a white sauce in under 5 minutes for a family of 5. The power button is amazing and a pan of water boils so quickly.

Can I ask how you cook in a wok - the proper Chinese on on an induction hob?
