What are your favourite slow cooker recipes?

It's slow cooker season in our household. Wondering what you cook in your slow cooker? Share any favourite recipes? Have you thrown a load of stuff in from the fridge and had it turn out amazing and become a favourite recipe?

I'm making the last of a piggybacking meal today. It started with a roast chicken dinner, then I made stock from the carcass and carrots and celery etc, then we had chicken and stuffing sandwiches, then I made a pork stew in the slow cooker using some of the chicken stock and the vegetables from it. Using the last of the stock in another stew today: thrown in the chicken leftovers chopped, six pork and beef sausages, leftover roast veg, leftover gravy, chopped leftover sage and onion stuffing, a small bottle of cider, herbs and spices. No idea what it'll taste like! Will report back!

Absolutely. Although I've no idea what tanning fur means, I'll have a quick Google.
I'm reading the GoT's collection and there's mention of characters wearing squirrel cloaks and similar. So I'm rather fascinated with these things at the moment.

Sorry, lastly, red squirrel are endangered right? Have you been allowed to shoot them before?

Yes Reds are endangered in the UK but we moved to the US where they are not. But reds are small and not much meat!

Tanning is the process of turning skin to leather to preserve it

Did a really nice chilli in the slow cooker today. Been cooking more with alcohol and it makes sauces so tasty. Added a bottle of ale to this chilli which came out fab.

The tanning process turns the skin to a soft leather with fur on one side. We collect them and see them into a cushion cover

An old work colleague said she cooks beef and onions in her slow cooker. Literally just beef, onions, a stock cube and water. Tried it and it does make a tasty gravy.

Really good chicken stew is our favourite. I use chicken thighs, and brown them first, but if using skinless you could probably just skip and throw them in.

Chopped onions, also fried for a bit first (again, could probably skip). I add a few fennel seeds towards the end.

Chicken stock with some white wine to which I add about a tablespoon tomato puree, drizzle of honey, cinnamon stick, one star anise.

All in the slow cooker with chunks of carrots (butternut/ sweet potato would probably work well too but I like the firmer carrot for this one). On high for 4 hours. I then strip the chicken off the bone - it goes further and it also turns the whole thing into a proper stew.

Delicious. Kids love it.

Tomorrow I am doing a lamb stew using lamb shoulder which I'll trim of some of the fat first. I'll fry off onions first. Coat the lamb in flour (generously - add a bit of extra flour after it's cooked to the slow cooker too) and fry in batches. Add to pan. Add stock, small amount of wine, puy lentils and butternut (you can use chickpeas if you prefer but I find the kids are more likely to eat lentils). I will probably add some passata or tomato puree as well as a couple of bay leaves and some thyme. On low for 8 hours.

If you don't want lentils or chickpeas (or beans), just cook as it is and then add a few handfuls of frozen peas at the end. I tend to cook them in the microwave and add them but you could drop them in 30 minutes before too.

Also pulled pork is good

Stick a Pork tenderloin in the slow cooker, mix passata, balsamic vinegar, sugar/sweetener, mustard powder, chilli powder, garlic granules, Worcester sauce and s&p in a bowl (taste and add more of whatever to make it taste good to you!) poor over pork and cook on low for 8 hours. Pull pork apart before serving

I do understand that and I'm not a vegetarian but I dont want to read about the squirrels being killed and skinned, sorry if I came off a little harsh but things like that really bother me. Unfortunately I'm a meat eating animal lover, don't judge Blush

Sorry but you need to get a grip of yourself. If you can't handle knowing where meat comes from, perhaps you shouldn't be eating it.

Anyone got a good ribs recipe to share? Have 2 racks of pork ribs and usually just buy a jarred sauce. My slow cooker is massive so usually keep them as a rack until cooked

Does anyone know how to adapt soup recipes for the slow cooker? Do you just use all the same ingredients and quantities, or do you need to decrease the liquid for soup as well?

I don't use mine nearly as much as I should, but I love making pulled pork. I think it's 2 onions sliced, with pork shoulder resting on top, and a 600ml bottle of BBQ sauce on top (my parents bring bottles over from Texas when they visit).

I also recently made Cuban black beans from Simply Nigella, was great as you used dried beans and don't have to worry about soaking overnight. Tasted nice and made loads for the freezer.

This is a shamelessly tasty recipe. 3/4 chicken breasts , mug of chicken stock (I use the whole cube) vegetables of your own choosing. Vigorously dust the bottom of slow cooker with hot chilli powder and tandoori seasoning (I use tescos own) coat the chicken in this and then add the mug of water chuck veg in and ether low cook all day or on high for two/three hours. Easy but tasty!!
