One easy dish I really like--tell me yours?

This is the dish I like to cook on Friday nights, nice and easy and I never get bored eating it. Please let me know yours, as I would like more like this! Veggie ones particularly welcome.

Adjust quantities according to number of people you are cooking for...
Some baby plum or cherry tomatoes
Some pitted black olives (I like Sainsbury's, a small jar)
Olive oil (about 1 tablespoon per person)
Crushed garlic cloves (about one per person)
Mozzarella cheese (a small packet will serve between 2 and 5 people)
Penne pasta

(The recipe was originally from a Sainsbury's mag I think and the original had dried chilli flakesomitted by me as DCs don't like itand fresh basil leaves to garnish, which I do if I have some but isn't essential. You can add chunks of red pepper to the tomatoes if you have some you need to use up.)

Method:
Preheat oven to 200 deg C. Wash the tomatoes and dry on kitchen towel (so the oil will cling to them). Rinse the olives and dry. Place both in shallow oven-proof dish. Add garlic and olive oil, stir well to coat. Bake for 30 mins till tomatoes are soft. 20 mins before end of cooking time, put on large pan of water to boil. 10 mins (check time on your pasta packet) before end of cooking time, put pasta on to cook. Chop the mozzarella into smallish pieces. When pasta and tomatoes are ready, drain both and add tomatoes and olives mixture with all the oil to the pasta. Stir well. Then stir through the mozzarella. Add basil if using. Enjoy!

Slow Cooker Jacket Spuds
Prick spuds and wrap in foil
Put in slow cooker
Cook on medium setting for 4 hours/ low for 6

Fry some chorizo - (or smokey bacon in garlic oil), add smoked paprika, can of chickpeas & can of tomatoes...cook for around 20mins.

Vegan version - fry an onion in olive oil till soft, add couple of green chillies finely chopped and a tbsp of cumin seeds, fry for couple of mins, add canned tomatoes & canned chickpeas cook for around 20mins - fresh coriander at the end although tastes great either way.

Tortilla - for 4 with sides, 2 without

Beat 8 eggs, a slug of milk and season.
Pour into silicon cake tin
Add a handful of frozen peas, cold sliced boiled spuds, sliced pepper, herbs, bacon etc, whatever you fancy
Bake at 180 ish for 30 mins

I don't even bother with the foil anymore for sc jacket spuds.

I coat the bottom of sc with oil, prick potatoes and pop in on low before I go to work.

We do a dish of potatoes,tomato, and halloumi cheese. Basically, fry an onion, garlic and add some tinned tomato or passata. Flavour with dried oregano and mint, salt and pepper. Cook for 10 mins or so. Boil some diced, waxy potatoes (can also saute them for extra flavour). Add cooked potatoes to the tomato/onion mixture. Dice the halloumi cheese (grill if you want for extra flavour) and allow it to warm in the sauce. Delicious

or the delicious dinner I had last night

1 mini baguette
cheddar
butter
marmite

butter then marmite then cheese then oven :D

butternut squash ( either roastedroasted, or cubed, steamed and flash fried in butter/oil) pesto, parmesan and wholemeal pasta is delicious. even nicer with baby spinach

mushroom risotto with really good dank tasting mushrooms mmm...

quinoa with lemon juice squeezed in and fresh basil :o delicious with ratatouille

just had breakfast now I'm hungry again!!

Bikerunski, that is inspired, doing a tortilla in a silicon cake tin and putting it in the oven--I always end up with mine burnt on the bottom of the frying pan. Must give that a go.

If anyone has any more, do add!!

My fave nearly- veggie recipe

Chop potatoes, an onion and cherry tomatoes, put in a shallow roasting dish. Mix about with plenty of olive oil, s&p, chilli flakes and a glass of wine or sherry/port. Bake for an hour. Add a sliced red pepper and a tin of anchovies. Bake another 30 mins. Eat!

Spanish chicken

Put oil in roasting tin and add
Chicken thighs
Chopped chorizo
Cherry tomatoes
A few garlic cloves
Baby potatoes (nuke a bit first)
Squeeze an orange over and add some oregano
Cook at 180 for 30 mins, spoon juices over it all and cook for another 30 mins.
Gorgeous and so simple! We have with couscous or crusty bread.

Chop mushrooms, leeks and courgettes and sauté them in a little olive oil. Put pasta onto boil. When the veg is soft (I sometimes add some pancetta lardons if I am making it for no veggies), mix in a dollop of creme fraiche.

When the pasta is cooked, drain and put back in the pan with some pesto. Mix it and then add the creamy veg mixture. Combine, add grated parmesan and serve in big bowls.

It's my can't be bothered dinner, and the veg changes according to what we have in.

Ok a veggie one:

Basic tomato sauce (you know, onion, garlic, herbs, tomato purée, tin of tomatoes). Add a bag of spinach (no need to do anything to spinach other a quick rinse). Mix with pasta, top with Parmesan.

For non veggie version add bacon.

Mmmm - the spinach gives it a really rich creamy texture with none of the fat of actual cream!

boil pasta
chop 200 g of smoked salmon
add around 150g of philadelphia type of cheese (I use economy Sainsbury's)
mix and warm, add pasta to it
I also boil frozen peas on a side at the same time to serve together.

I saw mine on This Morning by that Gino Decampo (think that's his name).

Garlic and chilli flakes in pan. Add frozen seafood cocktail (muscles prawns and squid). Add passata. Throw in spaghetti. Done.

I make it really hot with extra chilli flakes and it truly is the tastiest easiest dish ever. I haven't had it in two years cause DP hates sea food ... But sod him. I'm off to get some seafood!!

The other easiest meal known to man (and always tasty) is Gnocchi. It's 65p a pack in Aldi. About 2.00 anywhere else! Just heat some passata, chilli flakes and garlic in pan. Add gnocchi that's been cooked for three mins. Throw in basil at last second. Done. Takes about 5 mins! Serve with garlic bread. Yummmmmm Grin

Beetroot Risotto

Fry and onion until translucent
Add cupful of risotto rice and mix
Throw in glass of wine if you have it
Drain juice out of vacuum packed beetroot into pan (BE V CAREFUL ITS NOT IN VINEGAR!)
Give it a good stir.
Add chicken/ veg stock made from a cube.
Add chopped beetroot to mixture.

Top with slice of goats cheese (and crispy fried pancetta for those who cannot - just cannot - eat a meal without meat... Looking at you DH!)

PS If you go to Costco, get a goats cheese log for about £6 to slice and put in freezer - they defrost by the time you've finished the risotto. You'll get about 14 slices out of each.

Slow cooker Spanish chicken

Slice onions
Add chick thighs
Large squirt tom purée
1/2gls red wine or stock
Tin chickpeas
Diced chorizo
Paprika
Red pepper sliced

Serve with pitta bread warmed in toaster

Can tuna, drained
Basil pesto
Parmesan, grated
Cherry tomatoes
Breadcrumbs

-Mix the flaked tuna in a bowl with the pesto and half the grated cheese.
-Cook the pasta according to packet instructions.
-Mix the cooked pasta with the tuna pesto mixture and the cherry tomatoes in a large oven-proof dish.
-Mix together the breadcrumbs and remaining parmesan and sprinkle over the top.
-Grill or oven-bake for a short time until the topping browns.

Serve with some salad on the side or just on its own. Easy and tasty and made with mostly storecupboard (or things you'd have in the fridge) ingredients!

This is my favourite Friday night dinner.

Put chicken thighs in roasting tin. Chop up potatoes into wedges (skin on or off), add to tin. Chop up an onion into wedges and add that too. Cover it paprika and thyme and bung in oven for 30 mins. Take out and add chopped up chorizo. Shake. Return to oven until it either looks crispy or cooked.

Sometimes I vary other by adding parsnips in honey or sweet potatoes. It is the worlds easiest and yummiest dinner.

Pesto chicken pilaf

Put chopped chicken breast, raisins, mushrooms, uncooked rice plus twice the volume of chicken stock and a generous dollop of pesto in a casserole dish. Bake for 45-50 min at 200 degrees C.

1 pack of smoked bacon - chopped
1 carrot - blitzed in chopper
1 stick celery blitzed in chopper
1 tin tomatoes
1 tablespoon tomato puree
it says 1 teaspoon of chilli flakes but I use 1/2 and that is plenty

fry bacon, fry veggies, add the rest and simmer for about 25 mins
serve on pasta with grated cheese
