One easy dish I really like--tell me yours?

This is the dish I like to cook on Friday nights, nice and easy and I never get bored eating it. Please let me know yours, as I would like more like this! Veggie ones particularly welcome.

Adjust quantities according to number of people you are cooking for...
Some baby plum or cherry tomatoes
Some pitted black olives (I like Sainsbury's, a small jar)
Olive oil (about 1 tablespoon per person)
Crushed garlic cloves (about one per person)
Mozzarella cheese (a small packet will serve between 2 and 5 people)
Penne pasta

(The recipe was originally from a Sainsbury's mag I think and the original had dried chilli flakesomitted by me as DCs don't like itand fresh basil leaves to garnish, which I do if I have some but isn't essential. You can add chunks of red pepper to the tomatoes if you have some you need to use up.)

Method:
Preheat oven to 200 deg C. Wash the tomatoes and dry on kitchen towel (so the oil will cling to them). Rinse the olives and dry. Place both in shallow oven-proof dish. Add garlic and olive oil, stir well to coat. Bake for 30 mins till tomatoes are soft. 20 mins before end of cooking time, put on large pan of water to boil. 10 mins (check time on your pasta packet) before end of cooking time, put pasta on to cook. Chop the mozzarella into smallish pieces. When pasta and tomatoes are ready, drain both and add tomatoes and olives mixture with all the oil to the pasta. Stir well. Then stir through the mozzarella. Add basil if using. Enjoy!

Grill bacon until crispy (sorry, meat again)
Cook some pasta, add broccoli florets for last 6/7 mins, save 1 tbsp of the water when draining.
Crumble Stilton and add to pasta and broccoli with a small tub of Creme fraiche and the reserved pasta water.
Sprinkle chopped up crispy bacon on top.

hazelnutlatte can I ask how long you boil the cauli for? I'm a rubbish cook but assume you just want to parboil?

I've just realised I also did your dish, SpindlySpider, and pleased to report that everyone really liked it, even the fussy ones. I did it with tofu...not sure I did that quite right. I coated it in seasoned flour as it said on the packet and fried it, but forgot about putting it in the dish and then back in the oven! But it was very nice. I'll try it the other way next time.

Chicken Zorba coming up this week but I've just had a request for reliable old favourites as my DD1 has lots of exams. So experimenting will have to wait for a bit.

So here's how I got on. I did the chicken and bacon casserole, TyneTeas, and that was really good. Smile A bit of a mystery how 6 chicken thighs went in but only 5 came out--but I did leave it in the oven on a low heat for a long time while I was out and maybe a mouse came and stole a bit though no one who was in would admit it! Somehow I didn't manage to buy the chorizo, so that one will have to wait, Cogito. Your bacon risotto, PregnantPause, was very tasty (I normally do one with leeks, bacon and stir in half a tub of Philadelphia when cooked so it was a nice change). FriedFish, I bought everything to make yours but didn't have the courage to make it as I have some DCs with aversion to spicy foods and to fish...will have to keep that for when some of them are out.

Now for next week's shopping list...cjbk1 I will definitely have a go at yours!! Thanks everyone and keep them coming! Thanks

Tuna crumble:
1 tin tuna
1 tin condensed mushroom soup
Breadcrumbs
Oil

Mix together tuna & soup in a casserole dish. Stir a smallish amount of oil into the breadcrumbs & tip on top. Bake for 45 mins at 160degC.

We usually serve it with new pots & peas. You can get fancy/bulk it out with boiled egg or by making a mushroom sauce instead of using soup. You can also vary the topping - we've added oats, crisps, cream crackers, cheddar & stilton in the past. It's yummy!

Cheats cauliflower cheese - boil some cauliflower for a few mins, mix with some creme fraiche and Parmesan, bake in the oven for 20 mins. Much nicer than proper cauliflower cheese and easier too. Add bacon and leeks too and it's a full meal rather than a side dish.

With your courgette recipe though, you grate raw courgette? Blush I didn't know you could eat courgette raw

Teriyaki chicken stiry fry with rice noodles.

Chop chicken thighs into cubes, marinate in soy sauce, runny honey, a bit of five-spice powder and some grated ginger. Fry in a dry wok until cooked, set aside.

Cut peppers and a red onion into strips, stir fry with sugar snap peas, bean sprouts and baby corn, add the chicken back in, along with fresh, ready-to-use rice noodles, and some marinade that you kept back - stir fry until the noodles are hot - serve.

Just doing my internet order, and this coming week I will be trying your Chorizo Pasta, CogitoErgoSometimes, your chicken and bacon casserole, Tyneteas, and your mackerel and rice dish, FriedFish, and your bacon risotto, PregnantPause. Too many ideas to try all of them in one week but keep them coming!! Thank you Thanks and I'll let you know how I get on!

Could fancy this now actually;
wash new potatoes
nuke till nearly soft
mix in pesto and jar roasted pepper
tear mozzarella balls place on top(low fat are too chewy IME)
roast a bit

Baked omlette with salad etc.

I use a silcone cake pan, lightly fry some red onions, and pat dry then arrange what every veg we have knocking around. Arrange them nicely in the pan if doing it for friends, just chuck in if it's just us Grin.

Beat and season the eggs I allow at least 3 as a basic then add an egg per person. That is if just the 2of us 3eggs if us and other couple 5eggs.

Bake at 180 for 30 minutes or till set.

Serve with salad, crust bread or wedges.

This can be a use up what's lurking in the bottom of the fridge recipe or can be poshed up.

Red onion, feta and tomato looks/ tastes great, as does bacon & asparagus.

And OH takes the leftovers cold with salad, like a pastry free quiche.

Patatas Bravas with an antipasti plate or a fried egg on top.

Courgette pasta - warm some extra virgin olive oil and add some chopped garlic to gently flavour the oil. Grate courgettes and add to the oil and fry until they are soft,then towards the end of cooking add a couple of sprigs of fresh rosemary which really adds to the flavour.Add your cooked pasta to the courgette frying pan and mix together and season.

Just managed to come back to this thread after being away last weekend and then laptop charger broke. Chuffed to see so many recipes--thank you!!! Smile Can't wait to try some. I'll also have a think and see if I can come up with another one (though nothing is as easy as the one I started this thread with!)

My favourite comfort supper is sushi rice and salmon - once you've got the knack of the rice, it's so easy.

make sushi rice (wash rice in water till it's clear; cover with just enough cold water; put lid on; cook for 15 mins or until water's absorbed; remove from heat, stir through some sushi dressing and cover with tea towel to steam.)

shred some smoked salmon, slice half an avocado and/or cucumber. Scatter on top of warm rice with sesame seeds and soy, with wasabi on the side. Yum.

Microwave some sliced peppers and red onion till soft
Add to a flat bottomed frying pan with a slug of oil, cooked slices of waxy potato go well too

Shake around a bit
Add seasoned beaten eggs
Cook slowly till set on the bottom
Sprinkle with crumbled feta
Finish off in the oven
Serve in wedges

I just do a big pot of vegetable and lentil soup. Takes fifteen or twenty minutes and uses up all the vegetables in the fridge and any in the freezer that make it a bit more interesting. ( Add potatoes for a bit of bulk)

Also do miso soup with noodles, (or stock made with Marigold Swiss Vegetable stock powder and boiling water plus lime juice and chilli) and any sliced and shredded vegetables that I have around thrown into the pot.

Thats all.
