Important question for NI people - what's the story with tray bakes?

It seems to pop up ever so often in discussion here, and then posters from Northern Ireland all chime in with their favourites. I still remember the delicious Lumpy-something I had in a little cafe in Antrim.

Is it a Northern thing, or am I way out? And can we have some recipes?

I would use 'tray bake' to describe any cake that's make in a bigger 'tray' shaped container (usually a lined meat tin in my case ), as opposed to individual fairy cakes or one 'round cake' to be cut up. Kind of like you used to get for school dinners, where there's a big rectangle of it and you then cut into squares.
Not heard it used to specifically only include 'fridge cakes'.

I always get the kids making fifteens as part of the St Patrick's day activities at the children's centre in england I work at. It combines their two favourite things: messy play & cooking. Ah have fond memories of cornflake cake & custard for pudding at primary school. Have followed link, might use it with kids next paddy's day for a change.

My mum used do this tray bake that involved two layers of pastry, in between were raisins and some thing else in a really sickly sweet caramel sauce (made wih brown sugar cream and other stuff) can't remember what it was called but it went down a treat at the stations

You can't beat mars bar squares or millionaire shortbread IMHO

I used to have tray bake for dinner. It was filled with mince and veg and served with mash and gravy.

Did not know it was a sweet dish!

My (Catholic) mother makes the most ah-may-zing chocolate tiffin thing in a tray. The best I've ever tasted.

puppydogmummy, I will be making a batch of those next week for a bake sale we call them lemon squares though. It'll be my first time making them as my mum is Tray Bake Queen and I usually just ask her to do stuff for me for bake sales but she's on holiday so Im flying solo. People have been known to fight over the last one at previous bake sales so the pressure is on

Applegreen ( service/ petrol station) sell 15's. They were with the Rocky Roads and Millionaire Shortbreads.

At least according to my aunt.

I live in England and take my little one to a group at a Methodist church, she got very excited about the prospect of me getting traybakes and was disappointed when I told her it was usually just a biscuit!

I also loved cornflake cake. Make it in a rectangular tray and slice into square.
