Best cauliflower cheese recipe?

I've been looking at a few different recipes for cauliflower cheese but can't decide which one to use... Any recommendations?

Well, i never. It never occured to me that CC was anything other than cauliflower+ cheddar cheese sauce!

Going to try with mustard and following for further inspiration

I've only recently discovered cauliflower cheese (not sure why as always liked cauliflower).
I just buy it frozen from Aldi.

i steam my cauliflower to stop the wateriness...until just off done.

Make sure the sauce is really well seasoned and really thick, and dob in a good spoonful of English Mustard, and try and get a couple of tbs of creme fraiche in it too....NOT low fat.

Also grate some cheese and throw that over and around the cauliflower before the sauce goes over. Sometimes I chuck in chunks of random bits of cheese as well. Mozzarella is good, but maybe not for a side dish.

The sauce should be so thick it looks like a duvet laid over the cauliflower. More cheese over the top

Then into a hot oven until it is the picture of golden and cheesey goodness.

If we are having it for a main then I put bacon over the top too.

Make it with romanesco cauliflower.

Microwave cauliflower until just tender don’t boil - reduces wateriness.
Cheese sauce with a good dollop of English mustard and a scratching of nutmeg. Don’t drown the cauliflower in sauce.

I cook my cauliflower until cooked but firm first. Then I pour cheese sauce on it and brown it off in the oven. Stops it going watery.
