Allergies and intolerances

egg and dairy free biscuit recipe?

Hi - ds (18 months) is allergic to egg and dairy but I would like to make some biscuits with him. Has anyone got a recipe, preferably an easy one that can be rolled out and cut into shapes? Any other ideas for baking with very young allergic children?

I make oat biscuits, using a dairy free marg. such as Pure. They don't need egg anyway. Instead of the milk I used soy milk, but I've seen people do it with formula. I'm just about to go to work but will look up the recipe and post later.

One simple solution is to go to a healthfood shop and get a pack of their dried egg alternative (made for vegans to cook with, can't remember the name unfortunately) and use either soya milk or goats milk or rice milk wherever dairy milk is needed. Then use any normal recipe but replace the dairy ingredients with these. I was a vegan for about 5 years 10 years ago and this was generally what I did.

My DS can't have egg and I did a google search for recipes and found some quite good sites for recipes including:

www.allergies.about.com (try www.allergies.about.com/library/blwfanimalcookies.htm)
and www.vitacost.com/science

Also got a fab book from Amazon called Bakin' Without Eggs.

Now whilst all these are American and use American measures and names for ingredients the results can be really nice.

Actually, thinking about it, you don't need egg for most biscuit recipes. Here's a quickie that my mom sent me that you could easily reproduce:

Melting Moment Biscuits (her title not mine!)

4.5g self raising flour
4.5g margarine
1.5g icing sugar
1.5g custard powder (you can get vegan alternative)

Crumble all the ingredients together and roll into a ball then flatten out with a rolling pin, cut into amazing and fabulous shapes and bake at Reg. 4 for 10 / mins or until set on tray.

They are yummy.

Just a thought - You would have to be careful with the custard powder as most have egg in them.

Hi - have ds with the same allergies and have found the PURE website (purespreads.com, I think) has two great recipes: one for choc cake and the other for biscuits. Didn't think I'd ever find a good choc cake for him so am thrilled!

We belong to the anaphylactic campaign and a mum there has make a booklet (£4 ish, I think) called 'baking without eggs and stress' - or something similar and they are all egg and dairy free: it's great! I can really really recommend their banana cake too.

Hope that helps. Ds loves homemade breadsticks as well (esp with watered down marmite overthem before cooking).

wow, thanks everyone. There's some great ideas here! I tried the banana muffins from Nigella Lawson's 'How to be a domestic goddess' book, using dairy free marg instead of butter (they don't need egg) and they were gorgeous! They were also ridiculously easy to make.

okay one recipe

200g oats
4 level tablespoons of golden syrup
75g demerara sugar (i never have this so use regular sugar)
100g of marg (i use soya marg)
75g of dried friut ( ilike apriocts)

to spice it up you can add a teaspoon of ginger
and if your feeling naughty chocolate over the top.

method

  1. oven at 180°C/gas mark 4
  2. grease shallow tin
  3. put marg, sugar and syrup in a large saucepan, heat gently until sugar an dmarg have dissolved.
    4.stir in the oats and fruit
  4. press into tin
  5. cook until golden brown (~20-30 mins depends on thickness of flapjack)
  6. leave to cool for 5 mins
  7. mark into fingers
  8. leave to cool completely in tin then remove

this is the best flapjack reciepe, added plus is it can be wheat free too since oats are generally okay

They are v yummy! Thanks! Don't think I cooked them quite long enough or didn't grease the pan properly as they stuck a bit when I was trying to get them out but they were delicious!

I will just have to keep trying them - what a hardship!
