Egg subs and Ice cream

I'm transitioning at the moment to vegan. I'm am not eating any meat and nearly dairy free. I'm having trouble coming off eggs as I use them in pancakes and waffles but I'm going to try chia seeds/aqua faba.

Has anyone got any tips for using aquafaba/chia seeds in cooking?

Also, do you have any good vegan ice cream recipes that are sugar free? I'm trying to make a chocolate one from cashews, almond milk, cocoa powder and dates but I'm having trouble with getting the consistency right.

We just buy ice cream, I can't be faffing with soaking nuts. < unhelpful >

We just buy Swedish Glace.

Sometimes I just freeze slices of banana and puree them with chocolate sauce. But don't do anything else fancy.

I've seen vegan ice cream recipes that are basically just frozen banana and coconut cream.

But yeah, I normally get Swedish glacé as the co-op sells it and it's delicious. It's got the black speckly look which is usually an indicator of a good quality vanilla ice cream.

A large avocado, a banana, handful of frozen berries, couple of tbsp strawberry jam, 350ml(ish) orange juice, 2 tbsp cacao. Blitz, then make ice cream as you usually would.

If you want to be doubly sure of right thickness, warm through the berries with 1/2tsp cornflour (slake cf with a bit of water first) until it thickens.

I am vegan and have been for many many years old woman Dairy free Ben & Jerrys is amazing if you get it where you are, So Delicious is too. Egg substitutes in baking can be apple sauce, banana. Also VeganEgg by Follow Your heart for scrambled, omlettes and in baking. Soak chia seeds in almond milk or aquafaba to replace egg. Pinterest is your friend. Keep going, you will eventually not even need to think about it apart from dining out.

You can literally freeze banana chunks,let them thaw slightly then whizz them into ice cream texture!

If you've got an automatic ice cream maker you can make anything into sorbet or ice cream I love it because it shows that you don't need tons of effing sugar syrup (like the old recipes say) to make sorbet.

My favourite is almond ice. Fabulous.

Banana for eggs and you can make a good ice cream from bananas as well. I'll dig out the other subs we did, DS is a fan of sorbet and our homemade banana ice cream so we rarely bought the dairy free versions you can get.

Linseeds ground and soaked are another good substitute for eggs, better really because they give a lovely jelly like consistency, so also good sub. for gelatine (not as solid though). They 're also very healthy!
