What's wrong with my hummus?

Magimixed tahini, chick peas, olive oil, crushed garlic and lemon juice but it came out rather dry. So, put in more olive oil, still texture not right.

What can I do to make it better?

i use stock (chicken or veg) to loosen it.

I get a fab one through my vegbox (Riverford) and was reading the ingredients the other day - they seem to use water. It's about the third or fourth ingredient, before garlic anyway. And theirs is the yummiest hummus ever. (Of course, yours is probably better )

Thanks for all the suggestions.
DH thinks it's too much tahini too, but can't take it out now it's all been mixed together.

Will try adding some veg stock to loosen it up

More lemon juice and as much olive oil as it will take, less tahini. As you can't take the tahini out, put in more of the other wet ingredients to redress the balance of flavours and textures. Yum, enjoy.

Yoghurt????? I thought the whole point of hummus was that it is vegan. Nigella should be ashamed of herself. Pah.

lebanese, greeks, egyptians and all around the med are not vegans, just may not be able afford meat everyday thus vegetarian protein options like hummous and falafel etc.....and yogurt and fresh cheese

For vegans, yes probably add water?

Sorry, innocent comment taken the wrong way. The recipe traditionally enjoyed in the ME is coincidentally a vegan one. Adding yoghurt sounds an interesting twist, just not for me.

S'ok. In fact in the general spirit of trying new things I did half a batch today with the yogurt, was fairly ambivalous about the addition, but at least I tried it

worstwitch what is your recipe, exactly?

It may not be a very good one, with regards to quantities, if it is coming out dry. I agree with the others that more water or lemon juice is needed.

Pah at Nigella recipe who needs her when you can use an authentic recipe?
