Three Tier Wedding cake. Help needed with White Chocolate Cake

Hi all.
I hope that you can help me again, as I am big time struggling with this one.
My son and D-I-L to be, want me to make them their wedding cake. Eek!

One tier has to be a fruit cake, one a lemon drizzle but the middle tier has to be a white chocolate cake and all of them have to be in a naked style wedding cake. The white chocolate cake is the one where I am really struggling.

All the recipes I have seen have been some sort of white chocolate decoration but I can't do that if it is a naked cake.

So as you kind lot have helped me before, I thought I would ask if any of you have or can suggest a recipe for a naked white chocolate cake. Pretty please. x

Gosh that’s a really tough brief. Have they ever actually had a naked white chocolate cake?

I’d experiment by adapting a sour cream cake that uses melted chocolate. Something like this: www.deliciousmagazine.co.uk/recipes/chocolate-soured-cream-cake/

You’ll need to replace the cocoa powder with flour and add vanilla to get the white chocolate taste.

I’d cheat and push back on their brief though Grin. Those three cakes will look a bit crap together in a naked style, I can’t really visualise what they’re trying to achieve Confused.

I’d just make a vanilla cake with sour cream in and layer it up with whipped white chocolate ganache. They won’t be able to taste the difference.

I don’t think it will look awful.

If naked cakes are allowed some filling/covering then that makes it much easier.

Yes, it is proving to be more difficult that I originally thought. I will take a look at those suggestions. I definitely need the practise!

I thought I might tie it all together with a few fresh flowers so it looks nearly all the same.

Could you replace some of the butter with cacao butter? That's what I would do - it would give it a white chocolate taste. You can get organic cacao butter on Amazon. I'd sub about a third of the butter for melted cacao butter and add it after having creamed the butter and sugar.

(And if you have enough left - you can make massage bars with coconut oil and essential oils and some beeswax !)

This is a vegan recipie but uses cacao butter in the cake batter - which means it is possible

I've been craving white chocolate since I saw this - and so I'm going to make this one prettysimplesweet.com/white-chocolate-cake/ tomorrow - but I'll replace half the butter with melted cacao butter - I'll let you know how it goes !

Cacao butter is something I haven't really used before, so I guess I am going to have a lot fo practise.

I'm going to have a go at one of the recipe suggestions this weekend. Wish me luck!

Did you do a trial? I'm in Paris so spent the weekend trying to convince my inlaws not to go out. But I think I will try to do one evening this week. If you did a trial how did it go ?

What about white chocolate mud cake? If it needs to be naked Confused then just don't ice it.

Are they wanting you to use dowels and stack the cakes? Another, far easier option is to use a 3 tiered stand. There are many styles available and its far easier and quicker to assemble at the venue. We hired ours from a cake decorating shop rather than buying.

Maybe make a vanilla cake, split it and use this white chocolate icing to fill between the cake layers - I've made it loads of times and it's really nice. Or replace the dark chocolate with white chocolate in this recipe.

Thank you for all your kind and helpful replies. Apologies for not replying before, this is a strange time we are living in and I have been trying to work out what our best options are if we now have to delay the wedding.

I hope that you all stay well and it looks as though I am going to have plenty of time to practise these recipes if nothing else.

Love always wins. Whenever it happens, I hope it is a lovely celebration. It's a strange time indeed.
I have found my cacao butter - I am under lockdown now for at least two weeks, though we have been told to expect a month at the least.
It's only day two, and the reality of life in a city - but between 4 walls is hitting hard. But I have cacao butter, a pretty full larder (well baking drawer, Paris apartments oblige) and the shops are pretty much fine here. And so I will try and try again. and when we get to the other side, because we will, we may be bruised, but we will - this too will pass - at least, I will know how to make a decent white chocolate cake.

White chocolate is also my sisters favorite, she is in lockdown in another EU country, she has a new baby, who I now will probably meet for months, but when I do, there will be cake. I know it won't be a naked cake, it'll have a white chocolate and basil ganache.
