Re sauerkraut.....don't know what to do with it.

I bought some sauerkraut. I don't have the faintest idea what to do with it. But I heard it was good for you....so on a whim in Sainsbury's I put in in the trolley. Yes I should have thought this through. But there it is.

What does it 'go' with??

Salad, sausages, sandwiches...It's yuk (well othee people love it) though but very good for you apparently (not the vinegary none).

Thank you - This one doesn't have vinegar but it does have white wine...I will do some research. Just being lazy...

I absolutely love it, although I prefer the kind without the wine, I think wine makes it taste funny. OP, if you don't like this one, try the one without wine, and the best is from the Polish section of the supermarket. You put it into sandwiches that have meat in them (cold cuts, steak, sausages, etc). It tastes brilliant, it gives you lots of vitamin C and fibre, and as BarbarianMum says, it helps you digest grease.

My Dutch friends like it mixed with mashed potato with microwaved mattesons smoked sausage and fried bacon. I think its revolting, but just about bearable. Its my DH's favourite meal. Confused

Grate some carrots on fine grater, add it to your sauerkraut. I would say 1 medium carrot to a cup of sauerkraut.
Leave it for 3-4 hours mixed in the fridge. Serve with any pork dishes.
Some people don't like it anyway and for some it is an acquired taste.

Make sure you squeeze out as much liquid out of it as you can.

It goes in a casserole, black pepper, no salt needed, a few bay leaves, then bury some meat in it, best some pork or sausages but chicken will do as well, you can add some rice, or not, add some white wine, cover and bake on low for quite some time, uncover, and finish off on higher temp.

It will only achieve it's effect (intestinal good bacteria) if it is unpasteurised. The Sainsbury's one is pasteurised as far as I remember.

It's filthy stuff - as is Kimchi - and yes, I know - I keep reading we should be eating more fermented foods but for fuck's sake, there is a limit! Just open the door and shove it out.

great with gammon.

for the kraut, fry an onion gently until it translucent. then add a teaspoon of sugar. when it starts to caramelise add the kraut. add some apple juice for sweetness. (or a small tin of pineapple chunks+juice)

Get a couple of different types of sausage from your Polish shop, also some slices of belly pork, and cook with the cabbage in a casserole as mentioned above. Delicious, a real warming winter meal.

My friend opened it earlier and tried it (she's never had it before either). She really liked it, though proceeded to burp for the rest of the evening. I smelt it, it was quite reasonable, so will try it tomorrow. I couldn't try it as had just had chocolate muffins...

decide what you are having it with : gammon, sausages, hot dogs, bratwurst, baked chicken
then heat it gently in a pan till most of the vinegar is driven off , serve with the meat and lashings of mustard
or chop hot dog into it and heat

only the English eat it cold Wink
heated up it is genuinely yummy
