What did you have to eat today?

I've had:

Breakfast - nothing, because I had no time and wasn't organised
Lunch - risotto with mushrooms, spinach and asparagus
Supper will be - left over lentil bolognese

And some tea and more diet coke than is good for me

Yesterday
Brekkie- avocado on toast (one with chilli/pepper/salt and other with sundried tomato & cashew parmesan toppings)
Lunch- salad (leaves, quinoa, roast veggies, sweet potato, olives, beetroot) and soy yoghurt w/ mixed berries for after
Snacks - nakd bar and a pear
Dinner - butternut squash, chickpea & spinach curry with pilau rice. Followed by some dark choc buttons, dried cherry & walnut mix.

Fast day today so green lentil and veggie soup then avocado toast plus an almond milk latte and 3 black coffees

kiki sorry just noticed your question. Buckwheat cakes are like rice cakes, but made from buckwheat. They're a bit softer than rice cakes and buckwheat is a complete protein.

3 oranges,
Peanut butter on toast,
Tofu and wholewheat noodles with mushrooms and sweet corn soup,
For tea I'm having chick pea and coconut curry with vegan quorn pieces.
Probably some popcorn too. X

Yesterday I had:
B: Ciabatta toasted with Mirabelle Plum jam and a chopped up apple
Glass of orange juice with some milled flaxseed stirred in

L: Leftover spaghetti with capers and tomatoes and olives
Mini grissini's with a White bean, parsley , garlic and olive oil dip

D: Was running very late so had some Potato Bread, baked beans, mushrooms and tomatoes with parsley and cumin. Frank's hot sauce. for an easy, comfort food dinner.

Yesterday I had muesli with coconut milk and sliced strawberries for breakfast.

Lunch was ricecakes with homemade turmeric hummus and avocado followed by fresh pear, apple and ginger juice.

Dinner was Buckwheat and beetroot risotto.

I am trying to diet in a low-carby way (where possible, when vegan Confused). Therefore yesterday I had:

Walnuts and almonds for breakfast (200 cal)
Soup at a pub - very light (red lentil, chickpea and tomato) plus some sweet potato wedges (circa 500 cal in total)
Red pepper and a carrot (100 cal?)
Beetroot and a few more nuts for dinner (around 150 cal)
Plus multiple cups of tea with soy milk!

Looking at the same today. Weirdly, I feel ok!!

Yesterday I had

Buckwheat cakes with mashed avocado, hummus and diced tomato
Turmeric, carrot and coconut soup with sauteed mushrooms and seeds
A banana
Harissa roasted veg (squash, courgette, peppers, shallots and garlic) with quinoa and a green salad

Tonnes of leftovers so I think today will be pretty similar!

I know I was last one to post but actually I'd love to know from others. Today I had:

Very green and healthy smoothie (think it was kale, celery, pear, almond butter, coconut water, cucmcuber, spinach and maybe apple?)
Vegan ramen
Crazy Japanese avocado on crispy rice thing
HM carrot and banana cake
Toast and marmite
Dark choc
Bourbon
Roasted cashews

French, you numpty Grin

I had oat griddlecakes from Thug Kitchen for breakfast (yummy), then a cobbled together couscous thing for lunch with a bit of marinated tofu, olives and sundried toms. Currently planning a homemade pizza with melty cheese, olives, sundried toms and chilies for dinner. Yummers.

Muesli and almond milk for breakfast

Tempeh bacon sandwich with tomato chutney and vegenaise for lunch followed by a packet of om bar buttons.

Dinner will be a mushroom, spinach, carrot and tofu curry with rice.

Wine for fun.

Vegan omelette, parma ham and parmesan?! I've never figured out a way to get that 'egginess'. Though I haven't tried black salt (is that what it's called?) and I think that's meant to help.

a glass of Champagne.

Just about to have an early dinner. Steamed white asparagus wrapped in very thin omelette with chives, parma ham, topped with grated parmesan and grilled.

Today has been porridge with coconut milk, milled linseeds and sesame seeds, desiccated coconut and banana. Then for lunch was a toasted granary bread sandwich with hummus, salad and a vegetable patty with more salad on the side and dinner will be pasta with oatly creme fraiche, vegan Italian style hard cheese, spinach and broccoli with linda McCartney sausages on the side for the kids and probably melon for pud.

I always have avocado in. You can eat a whole one just on toast. Yum. In fact much better to live with avocado haters as more for you

I love avocado, but we rarely have it in the house, as no one else likes it. I don't know why that bothers me though, because I'll happily eat a whole one.
