Tonight on BBC 2 at 8pm the "Great British Food Revival" is talking about potatoes and with this in mind Potato Council would like to hear about your best tips for cooking with potatoes and recipes featuring potatoes and to then include them on their Mumsnet hub (coming soon). In case you didn't know: "Potato Council is part of the Agriculture and Horticulture Development Board working on behalf of British potato growers and purchasers to promote potatoes. We are funded through a statutory levy on 3,000 potato growers and potato trade purchasers and we aim to support the British potato industry."

Potato Council say that potatoes are "low in calories, they're naturally fat-free, bursting with vitamins and minerals, contain absolutely no cholesterol and when served with their skins are a great source of fibre"

They are going to be having a special page on Mumsnet soon and would love to feature some of your own recipes and tips for cooking for the family (and yourself) using potatoes.

Please share them here - everyone who adds tip or recipe to this thread will be entered into a prize draw where one lucky winner will win a £100 Sainsbury's voucher.

Baked potatoe. Clean it and cover completely with sunflower oil. Dust it with salt. Don't prick the skin with a fork as I find it cooks better without. Leave in the oven for about 85 minutes.

Mine is very simple: jacket potatoes

Brush the potatoes with a mixture of olive oil and sea salt.

Bake in the oven for around an hour.

Serve with pats of real butter or grated cheddar cheese.

Heaven :)

Potato and onion hash.

Grate potatoes and onions (more potato than onion, but to your taste).

Squeeze as much liquid out through a clean tea towel as you can.

Then mix with beaten egg and whatever seasoning takes your fancy - salt, pepper, herbs, chilli - anything at all.

Then either form into individual patties or do one large "cake" like one in the base of a frying pan. Squashed down flat, fry in oil until browning, carefully turn over to brown the other side.

Serve either a patty or a slice with poached/fried eggs and maybe bacon or sausage for a super duper quick supper.

Utterly divine.

Jacket potatoes rubbed with olive oil and salt - cooked (especially good n an AGA type cooker)

Cut in half, scoop out inside, mix with cooked bacon, grated cheese and some onion.
Return to oven to melt cheese.

Fried Potatoes
Parpoil some large potatoes (skins on)
Dice them into fairly chunky pieces
Fry an onion and some lardons (or bacon pieces) in a large frying pan
Add the potatoes and cook until just crispy (sprinking a spoonful of flour over them can help)
Season and serve with a poached egg on top

I love POTATO AND FETA BAKE

I fry onions and garlic in butter, layer with parboiled potato slices and cubes of feta cheese, add some cream and mixed herbs and black pepper and bake in the oven - it's delicious!

I love potatoes - I'd rather give up meat than potatoes. No carb diets are definately NOT for me!

When making shepherd's pie, add chopped spring onions that have been fried in butter, to the mashed potatoes. Yummy!

Mine is pretty simple but very tasty!!

For parties, I make mini stuffed jackets, using any small potatoes I have in the house. I bake for about 30 mins and then remove from oven, scoop out the flesh and mix the flesh with mature cheddar and any dip I have in e.g. sour cream and chive or garlic mayo (have used the free Pizza Hut ones before!).

I then stuff the skins with the mixture, top with a bit more grated cheese and return to the oven for around 15-20 mins more.

They really are very good!!

Potato Scones
Boil and mash half a pound of potatoes then add in enough flour to make a dough (not too dry). Roll it out on a floured surface to about a quarter of an inch thick. Cut into six inch circles and then into quarters. Prick with a fork and cook in a heavy pan which has been lightly greased. Cook each side for about three minutes or until golden brown. Great as part of a fry up (or grill up if you're feeling healthy!)

For mashed potatoes, Scrub them, and boil with skins on. push them through a ricer with the skins on. The skins squish up, and stay behind in the ricer. If you or family don't like cauliflower, put it through the ricer with the potatoes - you don't know its there.
Add any other cooked root veg the same way. Disguises veg for picky eaters. I cook a very big pan full of potatoes, and then mash and freeze it sort of flattened out on baking parchment. When its almost frozen, I break it up into chunks & bag it up. Just need to defrost amount needed for a meal.

Basic but the best - Jacket done in the microwave for about 8 mins then chucked in the oven for a browing off for about 25 mins. Serve with anything you like. Can't go wrong with a jacket potatoe.

Potato & Chorizo stew

1kg new potatoes
2 whole chorizo
1 large onion finely chopped
2 cloves of garlic finely chopped
big slug dry sherry
water

Chop spuds into .5 inch slices
slice chorizo into similar sized slices

Fry onion and garlic until soft, chuck in chorizo and spuds. fry for a couple of mins, add big slug dry sherry, top up with water until spuds and chorizo are just covered. simmer for 25 mins.

Serve with crusty bread.

Absolutey delicious.

My favourite potato dishes are a roast dinner with boiled and mashed potatoes and mashed potato mixed with corned beef with mushy peas and gravy.

Mustard mash goes down a treat. Mash two tsp of wholegrain mustard, dollop of butter and splash of milk.

Potato tip... for perfect roast spuds, parboil for 12 mins then tip into collander. Shake in collander really roughly to scratch up the outside before drizzling with olive oil and roasting with rosemary and garlic.

Guarantee the collander bashing will give you beutiful crispy outers and light, fluffy insides!

Nothing is better in the summer than a simple side-dish of boiled new potatoes with a knob of butter and sprinkle of fresh chopped mint. Just yummy!

Bake potatoes, scoop out the inside and mix with cream cheese, chives and bacon(cooked and chopped into small bits). Grate a little stilton ( you can use any cheese, I like it with stilton) over the top and put back in the oven on its highest setting until the cheese is melted and you just can wait any longer to eat it.

I am on slimming world so i love these potatoes - taste yummy and sin free!

Part boil salad potatoes
Spray with frylight
Cover with rosemary and crushed garlic and salt
Roast for 30 mins
You'll get lovely roast potatoes which you i pop on sticks and make lovely tapas or mix with feta cheese.

Don't throw away your potato peelings. Fry them up and sprinkle them with soy sauce - delicious

Cheese & Onion potatoes: chop a large onion and spread over the bottom of a large roasting tin. Peel and slice 3-4 baking potatoes and layer over the onions. Top with grated cheese and bake in the oven at gas mark 6 for about 40 mins. So easy and delicious! Makes a change from boring old mash and the kids love them too!

I make a slight variation on a nigella dish which is chicken,chorizo and potato (cubed) but i make up a creamy pepper sauce mix it all into a casserole style dish with a few sprigs of rosemry and cook in the oven it is delicious even my friend who is a chef loves it lol we love potatoes here there is so much you can do with them they really are a staple ingredient

Fry some diced potato with a chopped onion in a little oil then once cooked add 4 eggs and some fresh coriander, once cooked underneath place under a grill to finish off, then serve sliced with a salad

Potatoes are so versatile! You can make loads of different soups if you fry an onion, add a finely chopped potato, then your chosen ingredient (ok, leftovers) and a pint of stock, and liquidize when everything's cooked.
My favourite potato method is simple - cut them into chunks and parboil, when just soft drain the water out and give the pan a good shake (with the lid on!)put in a roasting tin with olive oil, sea salt, garlic and fresh rosemary. Roast until the potatoes go all crispy, roughing them up makes all the difference. Enjoy!
