Tonight on BBC 2 at 8pm the "Great British Food Revival" is talking about potatoes and with this in mind Potato Council would like to hear about your best tips for cooking with potatoes and recipes featuring potatoes and to then include them on their Mumsnet hub (coming soon). In case you didn't know: "Potato Council is part of the Agriculture and Horticulture Development Board working on behalf of British potato growers and purchasers to promote potatoes. We are funded through a statutory levy on 3,000 potato growers and potato trade purchasers and we aim to support the British potato industry."

Potato Council say that potatoes are "low in calories, they're naturally fat-free, bursting with vitamins and minerals, contain absolutely no cholesterol and when served with their skins are a great source of fibre"

They are going to be having a special page on Mumsnet soon and would love to feature some of your own recipes and tips for cooking for the family (and yourself) using potatoes.

Please share them here - everyone who adds tip or recipe to this thread will be entered into a prize draw where one lucky winner will win a £100 Sainsbury's voucher.

Many thanks and good luck

MNHQ

Baked potatoes with cheese - a variation.
Bake potato - then scoop out middle and mash up with grated cheese and mustard (wholegrain). Put middle back, then grated cheese on top and grill for a few seconds. Not exactly healthy but delicious.

Potatoes are one things that all the family regardless of dietary prefences and intolerances can enjoy.

My favourite with Maris piper potoes is a quorn, mushroom and potato pie,

Chopped up potatoes addd stock and seasoning cook in oven for 30 mins, add mushroom and gently browned quorn cook until potatoes are nearly done. Add short crust pastry top and return to oven.

Serve with veg and lashings of gravy

Guess what we've got for tea tonight!!! Grin

my best potato tip is for doing potato prints. You will need 1 large-ish potato, 2 cookie cutters, 2 colours of food colouring, and two small sponges (I cut the back off one of those scouring sponges for doing the dishes, from sainsbos).

cut the potato in half, and stick a cookie cutter into each half where you want the printing bit to be. Cut round the cookie cutter with a sharp knife. Remove cookie cutter - lo and behold, you have a potato with a neat shape on it to do some printing!

put the sponges in a shallow dish, and dot some food colouring onto the sponges until there's enough to print with.

Lay out some paper, acquire your young child/ren, and have fun printing with non-toxic ink!

afterwards, peel the potatoes and you can cook them as normal, as the food colouring is edible :o (and the sponges can be washed out, and used again at least once)

Fun for all the family :o (well, DH and I enjoyed this, DS was maybe a little young to do it at 16 months, but will try again soon!)

Any ole' potatoes, peeled and thinly sliced.

Fry some red onions in the bottom of a saucepan until slightly clear, chuck in a handful of plain flour and a big nob of butter stir with a wooden spoon. When all butter melted alternately add milk and grated cheese (and a little blue cheese and pepper if you have any) You don't need to stir to melt the cheese, holding the pan a little above the gas and whirl the pan around works really well.

Get a oven proof dish layer the potato slices in concentric slices. Once you've covered the whole bottom, pour on some cheese sauce, then another layer of potatoes, etc. Top with more grated cheese. Bake at around 180dc/gm6 for 30-45min ish.

YUMMY!

Forgot my secret for the perfect roast potatoes.

As well as the usual 5 minute parboil, after draining the potatoes, add a couple of teaspoons or so of gram (chick pea) flour to the saucepan before putting the lid back on to shoogle them and rough up the edges.

Tkae lid off again (to stop any steaming) and ideally leave to cool before putting in the oven basted in hot fat for roasting.

It ensure lovely crispy roast potatoes.

When mashing potatoes, drain the potatoes, and put the potatoes with the masher, so they are pressed down on the top... leave for a while whilst you serve someone thing else up... when you go back to them the steam will have passed through them and they will be much easier to mash.

When choosing potatoes, New potatoes are perfect for boiling and salads.

They have thinner skins and are firmer.

Fry some onions

bake tatas brushed first with just a little oil fromn the onions

mix together a spoonful each of Philly and yellow cheese spread with a dollop of Hellmanns, a generous helping of Seriously Strong Cheddar and some milk. Microwave until it's all melty and smooth then put filling in tatas and serve with onions on the side - yum! Not healthy but real comfort food.

Potatoes are so versatile! You can make loads of different soups if you fry an onion, add a finely chopped potato, then your chosen ingredient (ok, leftovers) and a pint of stock, and liquidize when everything's cooked.
My favourite potato method is simple - cut them into chunks and parboil, when just soft drain the water out and give the pan a good shake (with the lid on!)put in a roasting tin with olive oil, sea salt, garlic and fresh rosemary. Roast until the potatoes go all crispy, roughing them up makes all the difference. Enjoy!

Cheese & Onion potatoes: chop a large onion and spread over the bottom of a large roasting tin. Peel and slice 3-4 baking potatoes and layer over the onions. Top with grated cheese and bake in the oven at gas mark 6 for about 40 mins. So easy and delicious! Makes a change from boring old mash and the kids love them too!

Bake potatoes, scoop out the inside and mix with cream cheese, chives and bacon(cooked and chopped into small bits). Grate a little stilton ( you can use any cheese, I like it with stilton) over the top and put back in the oven on its highest setting until the cheese is melted and you just can wait any longer to eat it.

Potato tip... for perfect roast spuds, parboil for 12 mins then tip into collander. Shake in collander really roughly to scratch up the outside before drizzling with olive oil and roasting with rosemary and garlic.

Guarantee the collander bashing will give you beutiful crispy outers and light, fluffy insides!
