slow cooker lots of potatoes and spices

Hi

I have 5kg white potatoes

loads of different spices garlic, cumin, coriander

onions

tins of tomatoes but no coconut milk

anything i can do in the slow cooker
to freeze for the week?

have you made anything with them yet? hope someone sees this and shares some good recipes, want to bring my slow cooker out of retirement

slice and layer with onions, chopped garlic and whatever spices you fancy and cover with stock and bake overnight or least 8 hours.

may need to pour off some stock at the end and perhaps brown under the grill.

TBH I would just peel, chop and then freeze them all though.
