Chickpea and walnut salad

1 tin chickpeas (drained)roughly chopped
2oz walnuts finely chopped
1 clove garlic crushed
3 tbsp lemon juice
2 tbsp olive oil

I use food processor to chop the walnuts then the chickpeas. Combine all ingredients and season with black pepper and pinch salt. Delicious and full of protein!

I make loads of chickpea salad especially in this weather. I use two lemons, a big bunch of parsley, chopped olives/apple/celery/onion and olive oil and cider vinegar, salt and pepper. It's nice scooped up with pitta breads.

there's a gorgeous recipe on this site calle 'ceci' something or other. It;s kinda lasagna shard cooked in mushed chickpeas - but far better than that sounds.

yes you can make it without tahini: it will be fine for a baby but maybe lacking in flavour somewhat for adults.

I was clearing out my cupboards recently and found various tins of beans/pulses. Not sure whether you're vegetarian or not - we aren't - so have been adding to stews and casseroles. Works well, makes the meat go further too.

Fry bacon, 5 tomatoes, 1 onion, 1 garlic.
Add 3 tins of chickpeas and some basil. Stir.
Decant into oven proof dish.
Top with copious amount of cheese.
In oven for 30 min until 'golden and crispy' on top.

Honestly- really nice.
