john burton-race has a fab duck a l'orange recipe which my mum made at Xmas, it was the best duck I've ever had!!

I cooked a duck for the first time on Easter Sunday - it was fab-u-lous. Just pricked the skin, put it hot oven for half hour then lowered the temp and left it alone for another two. Can't wait to cook it again. And yep, use the fat for roasties. FAB

its the easiest roast in the world to do as long as you dont pour boiling water over then hang on a coat hanger and dry with a hair dryer - as I did once

I heard that the fat in duck is one of the omeaga ones that docs band on about so in moderation it is good for you. If you fancy an easy but yummy meal any night of the week with duck breasts try this.

  1. Slash breasts three or four times down to the skin
  2. Place skin side down in frying pan, fry removing fat from the pan as it dains from the skin. (keep in fridge for excellent pots)
  3. Remove when Skin crisp (about 10 mins)
  4. Place in roasting tin and spoon 1 tblsp of honey over each.
  5. Roast for about 10mins at 200 for pink baste with honey once .

    It is so simple but so good

i love roast duck, am drooling at the thought, but we usually only buy it at christmas for some strange reason. Maybe i will get one next week.
