Give me your tapas ideas..

So, off to neighbours on Saturday. Been asked to bring vegetarian tapas type things as we plan to have picky bits while we chat and drink.

Have you got any easy but impressive ideas?

We are new to this social circle so it would be good to feel confident going in….

Pardon peppers but they are quite hard to get hold of, sometimes in big supermarkets fast fry with a little oil and salt.

  • Lidl have mini croquettas in the freezer section still if you fancy cooking those. You'd need to check if they are veggie though?
  • I saw padron peppers for £1 a pack in lidl today also. Very easy to cook in a frypan with a drop of oil then add salt
  • Tortilla is veggie
  • Gazpacho soup. Could be served in small glasses if its not a sit down meal
  • Courgette or aubergine rolls with feta

This time of year,
baby artichokes fried or grilled with lemon and parsley
asparagus vinaigrette
salad of mixed tomato varieties with herb dressing, choose interesting colours!
feta, olives, grilled peppers and sun dried tomatoes combination

Another seasonal combination is chopped baby new potatoes, asparagus tips and quartered hard boiled eggs with vinaigrette dressing.
Ratatouille is always popular too.

Spinach with garlic and pine nuts and raisins.

King prawns cooked in the oven with olive oil and chilli. Bread to dip into the sauce after.

This thread reminds me of an old chap I know who often talks about Brandade, a dish that’s a purée of potatoes and salt cod. He always starts his little lecture with “This is a great dish if you’re feeding veggies”! Wink Wink

Buy kikones (deep fried maize) and habas fritas (deep fried broad beans) - both are awesome beer snacks.

Make pinxos on thin slices of toasted baguette, some with roasted skinned sweet peppers and extra Virginia olive oil, some with grilled aubergine, goats cheese and oregano, others with olive tapenade. You can do the same thing deconstructed (lots of little baguette toasts) with hummus and babagannoush to spread on them.

Lots of olives. Sainsbury's do really nice queen olives stuffed with almonds and you can buy inexpensive black pitted olives and mix them with chopped garlic, olive oil and sherry vinegar to give them a kick.

Garlicky mushrooms with lots of chopped fresh parsley.
