i do mine with herbs and onions in the bottom...put those in with the oil, and I use a heavy roasting tin, then brown the sausages, and sometimes have more thyme leaves in the batter

Green veg (usually cabbage, broccoli, green beans or peas but sometimes more than one veg). Gravy (preferably onion gravy, sometimes I add some mushrooms too). Maybe mash potato, maybe not.

formerbabe & @Endlessmizzle, as you need to have a very hot dish I would definitely use a metal one, and by metal I don't mean a non-stick coated one but enamelled steel or anodised aluminium. The only way to get it really hot before you pour the batter in is to put it on the hob (and non-stick coated roasting dishes won't generally cope with that high heat). The hotter the dish, the better the rise on your Yorkshire Pud.

Gravy, mash and cabbage to accompany (although I do like the sound of onions in with the YP).
