What's your favourite risotto recipe?

Love a good risotto. Mine is this BBC butternut squash and sage one but want to learn a few more.

Jamie Oliver's cauliflower with anchovy pangratto on top... gorgeous. Just remove the anchovy and check wine/bread ingredients for a veggie/vegan version

Mine favourite is a risotto based on kedgeree, so smoked haddock and peas etc. With Parmesan and a soft-boiled egg on top, coriander and that Chinese chilli peanut sauce.. mmmm

I also love cauliflower risotto; Jamie Oliver recipe. I think it has anchovies in it.

I love a fish risotto, also leek, asparagus and bacon, and beetroot with goats cheese.

Not exactly Risotto, but I love Paella. I throw all sorts in
Rice, saffron, chicken, chorizo, prawns, peas, onion and mussels, seasoning, paprika..
right that's the tonight then Grin

I am Italian and stick to our classics when it comes to risotto, I really can't bring myself to put chorizo, butternut squash, feta, beetroots etc. My bad, but this is my comfort food and just can't do it!

Soooo...I cook mostly risotto with:

  • mushroom
  • asparagous
  • seafood
  • peas and ham
  • cheese
  • zaffron

I have a wonderful recipe for a chestnut, butternut squash and blue cheese risotto. It's very autumnal and hearty. I also like doing a fish risotto - I just grill some fish and prawns and stir them in a few mins before the end.

Mushroom, made with fresh and dried mushroom, shallots and white wine then chicken stock and lotttttssss of pecorino

Or if I’m lazy tomato and cheese oven baked, shallots sundress’s tomatoes rice veg stock and a punnet of cherry tomatoes oven baked and cheesed at the end .

Hungry now.

In order of preference in my house:
Saffron (classic Milanese risotto)
Radicchio cooked with red wine and lots of pecorino cheese stirred in at the end
Tomato and rosemary
Porcini mushroom

I add left over roast chicken and mushrooms too and stir cream through instead of cream cheese.

Teen we do that too! I dry fry pieces of turkey skin I've put aside till they're crispy and put them on top as a poncy cheffy garnish! Grin

My favourite has asparagus, broad beans, peas and jarred artichokes, but nobody else will eat it so I don't get it very often.
