How much rice to cook?

I never know how much rice to cook, we always always always do too much. I've heard that people weigh pasta, so how much do you all recommend per person for rice? There's just me and my DH, but we're cooking enough for about 4 people so there are leftovers. Thanks in advance!

My foolproof method:

Boil rice in lots of salted water. For white basmati, I check after about 8 minutes. When its at the stage where you think "this isn't quite cooked, but if I was really hungry I'd eat it" - drain rice in colander and rinse 1/2 kettle of boiling water. Drain well. Return to pan, put on lid and leave for 10 minutes off the heat to finish cooking in its steam. Never fails

Any left over rice is quickly cooled, and stir fried the next day with homemade Kim Chi, served with a couple of fried eggs on top. Lovely stuff
