Soup, glorious soup

It's that time of year that I start making lots of soup. So far made standard lentil and delias leek n potato - both de-lish....


Looking for inspiration for next pot.
Please inspire me otherwise it will be lentil all winter long!

Chicken soup made from the carcass of a roast with pearl barley and veg.
Cullen skink
Chicken tortilla soup ( I cut odd left over wraps into strips, dry in the oven and store in a jar so I always have some handy) with avocado, sour cream, corriander, grated cheese etc. on top
Pho (make a batch of pho stock every so often and freeze)

Mexican tortilla soup

Carrot apple and ginger

Chicken vegetables tiny pasta and pesto

I would like a good parsnip soup recipe!

My faves are: Hfw recipe butternut squash and peanut butter soup, amazing.

JO- butternut squash and chorizo soup.

GR- butternut squash, carrot and thyme soup.

In fact butternut squash makes up the bulk of my favourite soups.

I love thai soups, so warming in the cold weather.

Broccoli soup with creme fraiche, is surprisingly nice. Ummm might make some today.

butternut squash soup is just lovely but you can improve it hugely by roasting the squash first.
Also make cheese crackers to serve with it....little piles of grated parmesan on a non stick tray into a very hot oven for about 5 minutes! Do not let them cool on the tray or you will have a bugger of a job to get them off!

I bagged a reduced FROrganic chicken in the tesco reduced and made Proper Chicken Soup, it's classified as a miracle drug in this house! I have eight boxes in the freezer.

I also have a smoked hough to do bacon and lentil....I just have to brave the back of the cupboard to search for lentils!

I made spicy carrot and butternut squash soup the other day. Even my soup hating DH liked it :)
I've just bought some celeriac for the first time ever - anyone got some soup recpe suggestions? Planning on using half for mash, but soup the other half....

My friend made me a delicious soup yesterday. It was butternut squash, roasted red pepper and veg stock blitzed up with a couple of extra light laughing cow triangles. Really tasty and no points on WW apparently.

Whatever's in the bottom of my fridge along with good stock (good stock cube if no stock) and an onion, half a leek, carrot and potato. Season to taste with salt, pepper, garlic, ginger, herbs to taste

Quick and easy pea and bacon - 2 rashers of smoked bacon simmered with 3 cups of frozen peas in a cup and a half of vegetable stock til the bacon looks cooked (only about 3 or 4 minutes). Take the medallions off the bacon, blend everything else together really thoroughly til smooth, serve with the chopped bacon medallions as a garnish. Gorgeous and takes 5 minutes.

The national trust do a wonderful red pepper and tomato soup and I am trying to find a receipe for that, (suggestions welcome!)
Other favourites are Delia's minestrone - but with orzo pasta instead of rice and added sun dried tomatos.
Curried parsnip
Courgette and parmesan
Sweet potato and ginger
cauliflower or brocholi with blue cheese.

Oh lots of good suggestions. Think curried parsnip soup will be next one as i have some. Yum!
