Vegetarian Daily 'What's for dinner?' thread

I am a rubbish vegetarian. Not in the respect of not eating meat or fish, that I am very good at. But cooking interesting, and more importantly, nutritious dinners each night, not so much.

So I mainly eat toast. Or sandwiches. Particularly as I work a variety of shifts each week, and it's just easy. But I am low on energy and damn it, I want better meals.

So I am hoping that having started this thread, I can sit back and watch it grow, with daily updates from the more grown up organised amongst you, which will inspire me to join in.

Anything able to be cooked ahead then frozen is especially welcomed, but not essential.

I'll start us off.

Tonight I will be mainly eating.... mushroom pate on toast Blush

dameofdilem have you thought about doing sliced potatos.we often don't have time(cant be arsed) to do the mashing so we simply slice cooked potatos on top of many a pie base.yum. or what also nice and different is dumplings. or we love slicing up either a bagueete or garlic bread on top.make a great topping for pie bases stews shepherd pie etc.

edame beans,green beans and broad beans with a vinegrette dressing and some roasted veg couscous tonight.chicken thighs for the non veggies.

Twinningit I made up my own recipe for the spicy rice. Stir fried onion, kale (had no sugar snaps) halloumi and red pepper with garlic and ginger and chilli flakes , then added cooked brown rice and a sauce made from a dollop of sweet chilli sauce, glug of soy sauce, squirt of lime juice. Then I topped with a fried egg and some finely chopped spring onion and loads of sirracha. It was good.

Place marking because I really have to up my vegetarian game. But last night we had Hairy Dieters Spiced Vegatable Strudel and it was really nice, filling, healthy and low cal (though quite a lot of chopping involved). Look! The leftover piece looks more or less like the photo in the book.

dame Here are some fish ones I do.
Chickpea mash fish pie
Tandoori fish with spicy cous cous
Pak choi prawns
Lime and coriander cod
Soy, honey and garlic salmon
Spinach, Avocado and prawn salad.

The challenge we have is:
No pasta (as dd eats so much of it during the week at school)
No rice (or only as an optional side) as neither dd nor I really like it
No (or not much) cheese as neither dd nor I really like it.

I tend to rely on:
Veggie fajitas
Veggie chilli (with rice for dp and with bread or couscous for dd/I)
Veggie stir fry with noodles
Fritatta with roast potatoes and green veg
Veggie/chick pea curry with bread
Baked tomatoes/sweet potato/chick peas/feta with couscous

I've an aversion to making mashed potato so veggie shepherds pie etc is out.
Luckily we eat fish to add a bit of variety as we're all bored of the above!

Here's my recipe Captain
Ingredients:
2 tbsp. of crunchy peanut butter.
1 tbsp. soy sauce.
100ml Coconut milk.
1 tbsp. vegetable oil.
1 red pepper deseeded and thinly sliced.
100g of sugar snap peas
Pack of fresh egg noodles (normally about 265g)
2 heads of Pak choi, shredded
1/2 a cucumber peeled into ribbons or thinly sliced into sticks.
30g of unsalted peanuts, chopped
2 spring onions finely sliced.

Make the satay sauce by putting the peanut butter, soy sauce and coconut milk in a pan and gently heat for 2 mins until it's well mixed, then set aside.

Heat the oil in a non stick frying pan or wok and fry the peas and pepper for 2 mins.

Add the in the noodles, pak choi and cucumber, mix and cook for another 2-3 mins, then stir through the satay sauce

Serve instantly and scatter with the chopped peanuts and spring onions.
Smile It is tasty.

Falafel, with pittas, salad, salsa and guacamole.
Moroccan chickpea soup
creamy mushroom tagliatelli
Moroccan eggs
Mushroom stroganoff
Spaghetti with cherry tomatoes and black olive sauce
charred veg cous cous
Satay noodles
Broccoli omelette bake
Squash, Cauliflower and roasted garlic gratin
Spicy thai soup
Creamy rice stuffed peppers
Spinach and Gnocci with ricotta
Sweet potato curry
