sweet potato advise?!

Hi there,
I have a lonely sweet potato in my fridge...
I'm hoping to make some sweet potato wedges.
Do I need to peel it or can I leave the skin on?
Any hints and tips useful!

I just roast on an oven tray, no foil or grease proof paper

Microwave, scoop out innards and have sweet potato mash. Then fill empty skins with a handful of grated cheese and whack in over til skins are crispy and cheese bubbling

Is grease proof paper better to roast it on than tin foil?

Someone told me that you shouldn't eat the pointy ends. Not sure why/if it's true.

Skin on, cut into wedges. I add a bit of cayenne pepper and salt and pepper.

Skin on, large wedges, oil, salt and pepper and bake on about 200 for 20 mins or so. Amazing dipped into sour cream or that gorgeous Boursin garlic cheese if you have any. Yum.

Yes skin on cut into wedges splash oil, salt and pepper job done in oven for 40 mins mmmm

Thank you! I think i'll leave the skin on and cut into wedges - saves me a job of peeling it. That is what I would do with a normal potato.
I'm a sweet potato virgin and didn't want to break any rules! HmmGrin

I usually peel, cut into chip shapes, toss in oil and roast for 20 mins or so, my DSs favourite side dish. But you could just cut into wedges with the skin on and a little oil
