Meals in individual dishes

There are a couple of days a week when various of us are out doing sporty things and coming home at different times. I like to cook individual portions of things which I can then reheat for different people when they come home.

This is complicated by the fact that ds2 (8) is ultra fussy. He won't eat mash or pastry and the only veg he'll eat without a huge fuss are peas and carrots.

So at the moment I always end up making macaroni cheese. Shepherd's pie doesn't work because of the mash and pasta bake means sitting watching him pick out the veg.

Does anyone have any ideas?

first thought was mac&cheese. put a handful peas in it. (or peas as side)

how is he with rice? or baked egg?

Liquidise the veg and add it to the pasta sauce

Shepherd's pie with sliced potatoes (parboil first so they brown and go crispy when you oven cook the pie) on top instead of mash? Same idea, equally easy but putting the potato in a different form might sneak by your DS2

Can you not just do big batches of chilli/curry/risotto/other one pot meals that freeze well and freeze them in takeaway style tubs in single portions?

Could you do a hot-pot-style cottage pie, with thin slices of potato instead of mash?

Sausage casserole?
Lasagne?
Moussaka?

Good idea to freeze individual curry portions etc but that means constantly cooking rice whenever anyone comes home!

You can freeze rice too, just cook it, cool it quickly (spread it out in a thin layer on a baking tray and leave for a few minutes), then freeze in portions. Reheated rice is only a problem if it wasn't cooled fast enough.

or use those microwave sachets.
how about couscous? boiling water from kettle and takes 5 min.

Dd2 didnt like mash when she was a toddler i brought a bag of forzen rice that wasnt already diveded up in those sachets and just measured out the right amount for her

We have this situation. I cook and freeze portions of rice to have with curry, chilli etc.

Lasagna works well too.

Sausage rolls, beans and sweetcorn.

Chili but with nachos/tortilla rather than rice
Enchiladas
As others have said, shepherds pie with sliced spuds
Homemade pizza (get ready, cook when they get in)
Curry with naan bread
Soup
Burgers/veggie burgers with salad and nachos (cut up tortillas, bake in oven for 6 minutes - lovely crispy, fat-free nachos!)
