Corned beef....what do i do with it?

Never liked it as a kid thought it was war food.
Any ideas? what do you make with it, anything but corned beef ash...yyuukkkk B.C.M

Beef fritters with mash

Ingredients
85g/3oz plain flour
1 egg, beaten
85g/3oz breadcrumbs
110g/4oz corned beef, cut into slices
290ml/½ pint vegetable oil
200g/7oz pre-cooked mashed potatoes
2 spring onions, chopped



Method

  1. Heat the vegetable oil in a large saucepan. (NB. Hot oil is dangerous. Do not leave unattended.)
  2. Take the fingers of corned beef. Dip them first into the flour, then the egg and then the breadcrumbs.
  3. Drop the corned beef into the hot oil. Deep-fry for 3 minutes or until golden and crispy.
  4. While the corned beef is frying, heat the mashed potato for 2 minutes in the microwave and add the spring onions to it.
  5. Spoon the potato mixture on to a plate and top with the corned beef fritters

Special oriental corned beef hash!

Use cold cooked spuds or cook first and dice them.
fry an onion, garlic, some spring onions add a chopped pepper and soften add the spuds and cook for a few mins to warm through, add the cubed corned beef. Then add a tablspoon of soy sauce and a small handful of coriander leaf chopped and heat through turning to mix through.

Sometimes we add worcester sauce, fresh ginger fresh chilli whatevers to hand really. Its ace!

Corned Beef Soufflé
Combining corned beef and eggs creates a nourishing, low-cost dish. The quantities below are sufficient for two people

Recipe Ingredients:

6oz /175g lean corned beef
Small can of tomatoes, drained
1 large onion, sliced
2 eggs, beaten
2 tablespoons tomato juice
Pinch of mixed herbs
Preparation Method:

Slice the corned beef and layer onions and tomatoes, sprinkled with tomato juice and herbs as you go. End with tomatoes. Pour the beaten eggs over the top and bake in a moderate oven for 20 minutes. Serve with a salad.
