Mine are either too small but very high or big but flat.

Can you give me any tips? Ones that don't include buying them Wink

I am not hugely experienced, but I can tell you my method…

I use milk and water, not just water. Sometimes, enrich with egg.

Shape into balls half the size you want them to be. Put on a tray to prove (and bake) which has 1" high sides ish, 1-2cm apart. They grow into each other, you tear apart after baking. The next roll along stops them spreading too much. Trial and error on the gap as it depends on the roll size.
