What to do with 12 over-ripe bananas?

We bought way too many bananas and they over-ripened really fast in the heat. None of us like over-ripe bananas and I can't be bothered to make banana bread (besides, most recipes only suggest you use two or three bananas). Anyone got any suggestions?

What icecubed said (ie freeze then liquidise with greek yoghurt for instant ice-cream). Serve with chopped nuts and a drizzle of maple syrup for breakfast. I have never known a child refuse ice-cream for breakfast.

If we have mushy bananas I just pop them in the blender with some nice cold milk to make a healthy milkshake. DC getting one of their 5 a day, but they think they're getting a naughty treat!

A bit late to add, but try baking peeled bananas with a sprinkling of brown sugar, a dash or two of rum, some raisins, a knob of butter and ground ginger or mixed spice? About 10 mins in a hot oven, and may need a squirt of lemon or lime juice at the end, plus vanilla ice cream to serve.

Last night I tried the yoghurt smoothie. Really good, and a huge hit with the DCs. I used the following:

3 x frozen bananas
200ml (approx) natural greek yoghurt
1/2 tsp vanilla essence
squirt of golden syrup (I would have used runny honey but didn't have any)

Whooshed it all up in the mixer and got a soft scoop consistency.
Put into 3 x bowls, topped with a few sprinkles. Happy DC's Grin

You can freeze them for another time and then make banana cake, muffins or ice cream, freeze in their skins, they will be mushy when they defrost but fine for cakes etc.

Loving these ideas but especially the freezer / smoothie ones.

It's too hot for baking just now and was my DS's birthday at the weekend and I massively over-catered so have way too many cakes and sweet things in the house just now.

Also like the idea of bbq'ing them. Mmmmm.

Peel them and lay them out on a baking tray, not touching. Then freeze. I just scoop them all into one large bag when they're frozen and take them out one at a time when needed, without individually wrapping them, but I do use them fairly quickly. Perfect for milkshakes, baking etc.

Banana muffins, banana bread, banana ice cream, or freeze them (in peel is fine) and use them is smoothies.

Ooooo I have the exact same problem! I was going to make Nigella's banana muffins (made with honey not sugar) and turn the rest into smoothie for breakfast tomorrow.

We had 3 over ripe bananas and tonight after our bbq I spotted them om the way back out to the garden and thought hummmmm bbq?? So we did and they were amazing!!!!! We put a bit of golden syrup on them aswell. Bloody lovely.

Banana bread! It's so much nicer when made with over ripe bananas. And you can freeze the them if you've made a few.

Peel them before you freeze them and wrap individually in cling film. Put them through a juicer if you have one, for mr whippy style swirls. Top with cooked dates blended up with some a spoonful of cocoa powder for a hot chocolate sauce. Lovely! Grin
