We got a 750g Panettone for Christmas and not sure what to do with it ! Anything but bread and butter pud please, neither DH nor I like the texture.

Panettone with Mascarpone & warm Chocolate

1/2 Panettone, cut into 6 thick slices
2 fl oz cup rum
4 tablespoons unsalted butter, melted
4 oz sugar
8 oz whipping cream
1/2 lb bittersweet chocolate, chopped
1/2 lb mascarpone

Preheat the oven to 190C. Place the panettone slices in a single layer on two 11" x 17" baking sheets. Sprinkle with the rum, butter, and sugar, and bake 15 minutes, or until the sugar caramelizes and the panettone browns lightly. Meanwhile, bring the cream to a boil in a large saucepan then stir in the chocolate until melted; remove from the heat.

Place 1 slice of panettone on each of 6 dessert plates. Pour on the warm chocolate glaze, top with a dollop of mascarpone and serve hot. Serves 6

It's nice - I did it a couple of years ago without rum (used apple juice instead). Be prepared to want to polish the entire thing off yourself and end up with stomach ache

You can use it to make a Tiramisu just don't soak the Panetonne in coffee/booze sprinkle it on instead. Toasting it(the Panettone) slightly before hand gives a lovely texture too.

This is from an Anthony Worral Thompson recipe book, haven't tried it but it sounds nice.

Panettone with Apples

3 Cox's Orange Pippin apples
25g/1 oz unsalted butter
1 tbsp lemon juice
50g/2 oz soft brown sugar
pinch ground cinnamon
pinch powdered cloves
2 slices panettone cut across in a 2.5cm/1in 'pizza'
50ml/2fl oz clotted cream
icing sugar

Method

  1. Core the apples and cut each into six wedges.
  2. Pan-fry the apple in butter and lemon juice for five minutes.
  3. Add the brown sugar, cinnamon and cloves
  4. Continue to cook until the apples are soft and the sugar resembles toffee.
  5. Meanwhile, toast each slice of panettone on both sides under the grill.
  6. Top with the apples, a dollop of clotted cream and sprinkle with icing sugar to serve
