Guaranteed hit, just made for lunch, mega cheap too

I must say I was dubious when it said on the reviews (Netmums I think?) how popular this dish is. But it was unbelievably so!! Shock Dss inhaled it for lunch today and wanted more. Luckily I had made some for dp who works nights. Seen as he is unaware I gave the extra to dss Wink

So here it is chickpea Enchiladas

1 tin Chickpeas
1 tin Tomato toms chopped 1 tbs tom puree 1 tbs oil 1 onion chopped
1 tsp garlic puree or 1 clove crushed 1 carrot grated
1 Pack Tortillas White sauce or creme fraiche or soured cream
Grated cheese

I also added bit salt, pepper and smoked paprika to ours. You can add what you want.

Soften onion in oil. Add Toms, chickpeas, tom puree, carrot, garlic and seasoning of choice. Simmer 10 mins til thickened. Roll mixture into tortillas (i used 6) Top with white sauce or other. Sprinkle with cheese. Bake 180c for 10 to 15 mins until bubbling. Then inhale Grin Well, I did Wink

Like Remus's mix too. I can see cumin and cinnamon working with that.

Remus I used to hate tinned tomatoes too with a passion then my sister taught me that if you cook them slowly on a low heat the nasty taste goes and they're quite yummy. So you could follow this recipe but just slow cook the toms/chickpeas for a lot longer. Btw I made yr chunky soup yday and it was yummy!!

The barley one? Am really glad you liked it. I'm planning to cook a cauldron full of it tomorrow.

With tinned tomatoes, it's more the lumps than the taste - I can cope with passata and the juice of tinned tomatoes - just not the horrid gloopy clumps of redness!

I was all hopeful when I opened this thread - and then it turns out to have chickpeas in. Bleurgh. Disgusting objects. Cannot stand the flavour in any form whatsoever.



I would second quesadillas as a great change from sandwiches though - even picky DH will eat those, and the DC love them.

Stealthsquiggle you can use any beans you like, try kidney beans perhaps?

Remus you could use passata instead. I use it all the time.

Boys had to rush out last night so didn't get there enchiladas. Went to see Harry Potter movie. They had them for supper though Smile

cjbartlett have you tried them with enchiladas as the texture totally changes? If you just hand them to them without mentioning what they are they may try them?

Remus yes the barley one, I also made a cauldron full! I have 7 portions in the freezer now for the next month:) I overcooked the barley tho which is a shame but still it was nice

Op I make a similar thing with chicken (making tonight actually as I have some mixture I froze when I made it last). But I think yr recipe is good as a quick meal so will definitely be trying it:)

I've just done something stupid. Have a big pot bubbling away now but haven't put any potatoes in it. Hoping it will be okay anyway and can't remember if I mentioned potatoes when I told you about it or not.

Any beans would be fine in the enchiladas instead of chickpeas. Or you could use some fried up peppers, courgettes, green beans, sweetcorn etc.

Dss had macaroni cheese today. Brings to mind when a friend said we were having it for lunch, was a tin Grin

Tinned macaroni cheese? Shudder.

I could cook some potatoes separately but tbh I think it will be okay. So far today I have:
been to the shops
made a lemon sponge cake
made and iced 3 dozen fairy cakes
made the soup
washed about a million loads of dishes
made some courgette fritter mix ready to be cooked later
sorted out three funeral outfits and three fancy dress outfits (funeral :( and then a party :) both tomorrow)
I don't think I can face peeling any potatoes and intend to move as little as possible for the remainder of the day.

CJ - when you bake them the texture changes a lot - give them a new name and see how you go.

I make them all the time - a whole variety of fillings, but always put them in a baking dish with some grated cheese and bake them for a while until the cheese is turning brown.... YUM.

Decided to have wraps again tonight as got some steak I need to use. Boys will have with chicken. Will do as fajitas though with salad etc.. Been mega busy myself, even managed to cut ds1's hair! Although to be fair it just needed layering and chopping into as it gets mega thick. It's always a fight to get them to have it done but they love it when it is Confused

I love making soup, make all different types. My elderly next door neighbour loves it as she has bad arthritis and can't cut food very well Sad I have loads of dried pulses too will get some made soon. Last one was broccoli was lush.

curious i made some brocolli soup recently too, i have 3 portions in my freezer, it was yummy! got the recipe on here when i needed to use up some brocolli:)

it was in food- i was experimenting to see whether food is better to post in as threads in recipes sometimes get lots of replies and sometimes don't get many. i got lots of replies in food but i still dont know which is better!

remus i did add the potatoes, it was in the recipe :) hope yours worked out (and that you got some rest!!)

Thank you. The potato-less soup was fine and the fritters were delcious. I spent about an hour and a half this afternoon playing a game on the computer and refusing to do anything else, so I'm rested now, thanks. :)

I might go and bump your soup thread because my food processor is dead so I need chunky soup recipes.

oh and fajitas were fab. Used frying steak (£2 for large piece) smashed it to oblivion with a rolling pin Grin sliced then mixed with spices and oil and fried with peppers and sliced onions. Mega cheap and lush Smile

Oh this recipe looks yummy, tomorrow's tea I think. And love delia's pork and olive thing too although haven't made it in a while....will add to meal plan for next week!
