Trying to take more ethical/environmental steps in 2022, one of which is getting back to a more vegetarian diet. We used to do this fine but since had a DC who is allergic to lentils and beans!

Please share with me your best family vegetarian recipes without lentils, beans (or any legumes!)

This is a fantastic recipe. I sometimes add celery instead of mushrooms and also find it's improved with a spoonful of sun dried tomato paste added-

Butternut squash and kale gratin. I’m using up the Christmas cheese for the sauce and old bread for the crispy top.

Dd and me love falafel wraps with grated carrots and cucumber for crunch and a yoghurt mint sauce or hot sauce.

Oh following, it's dh who can't do lentils and beans here, and the kids don't do well with food cooked in a sauce. In the face of these criteria I have fallen off the wagon of thinking of good veggie meals. Our every week veggie meals are pizza, jacket potatoes and broccoli pasta. It would be good to broaden this out.

Hello! Was hoping for tips, but I’ll go first!
Favourite hear even for picky ds. is cauliflower fried in rice or corn flour and coated with Korean fried chicken sauce. Very yum.
Other is a rose Elliot lasagne..
Fry mush and onions and garlic. In a new pan wilt spinach , stir in cottage cheese and a touch of nutmeg. Layer with lasagne ending in cheese and spinach. Sprinkle with cheese and bake till warm through and bubbly. Astonishingly yum, meat eaters like too.
Also Nigel slaters red onion tarts tatin.
Ds also like paneer in breadcrumbs with a katsu curry sauce, actually very simple to make! Dh made it, so we are still hearing about it!
This sounds like I am organised and know stuff. Cor!
