What are your best ideas for a "no cook" Christmas buffet for approx 30 people

We're having a party and I don't want to be cooking whilst people are around. What are everyone's ideas for a no cook (or can be cooked in advance and eaten cold) Christmas buffet for approx 30 people - including kids. People will be mostly concerned with drinking so won't want anything fussy or a hassle to eat so probably just finger food type stuff.

Centre piece of ham or salmon, cheese boardwith crackers, potato salad, couscous, cucumber salad, tomato salad , chunky bread, pickles and chutneys.

Cold apple sauce
Mayonnaise
Salt and pepper (yes, really)
Potato salad
Ketchup
Bowl of prawns either with or without shells
Seafood/Marie Rose sauce
Yule log
Mince pies
Cream and/or custard
Tin of sweets e.g. Roses or Quality Street or Miniature Heroes etc
After Eights or any other mint chocolates
Mixed salad or at least some lettuce
Whole or sliced tomatoes if not already in the mixed salad
Other salad dressings i.e. French dressing
Pre cooked shelled hard boiled eggs
Mixed nuts either salted or still in their shells

Ask people to bring a dish to share and you supply the drinks

This is good, cause it helps me organise my Christmas brunch! So far I have:
Crisps/ olives etc
Marinated smoked salmon ( peppers, peppercorns, shallots, lemon juice)
Cold roast pork with chilli jam
Pate with bread ( help youself)
Greek pie, made the day before
Bulgar and quinoa salad
Pasta salad
Garlic bread
Prunes in bacon
Pastry things to go in the oven
Dips and crudités
Fake caviar with cream cheese
Cheese board
Fruit
Trifle
Christmas cake.
Most stuff I can do the day before, any cooking is just really reheating. Most people will keep an eye on things in the oven if you ask.
Expecting around 60 including children. Crap. Hope the weather is good.

I know you said no cooking, but as well as all the above (dont forget the coleslaw!)

Our family always thinks a drinks and buffet do is vastly improved by a massive dish of Roasties! ( You only need to get them out of the oven and spinkle them with salt) also with a large dish of pigs in blankets.. (perhaps drizzed in a little honey and chilli flakes ) all can be prepared well in advance (parboil pots and rough up a then leave in the pot until ready to cook) and all you need to do is then shove 'em in a hot oven 45 mins or so before everyone arrives..
