vegetarians/vegans... what are you having for Christmas dinner?

I am uninspired.
we're veggie/vegan family here and need something lovely to make that will go with a roast.
am a bit bored of nut roast

Last year, I made this parsnip, cranberry and chestnut loaf www.bbcgoodfood.com/recipes/69605/parsnip-cranberry-and-chestnut-loaf and it was lovely. Quite special and Christmassy without being too much faff.
This year we're going to the inlaws so it'll probably be an M&S nut roast with about a teaspoon of overcooked veg. Still, I expect there will be a choice of about 3 different puds, so it's not all bad.

My Mum makes quorn roast usually as well as nut roast. I plan to add a butter bean loaf this year too. We overdo it on the veggies too, lots of roasted veg and a sweet potato/red onion/squash roasted mix usually gets done too :)

oooh lots of replies!!

thank you all, the mushroom wellington looks lovely.
and the bonus is that I actually have all the ingredients for it in, bar maybe a few more mushrooms,.

if it freezes well that would be great. do you cook it and then freeze?
do you cook from frozen? or defrost and cook?

We have the redwood's cheatin turkey roast, make stuffing with sosmix mixed with sauted onions and chopped chestnuts (can just follow meat stuffing recipe but sub sosmix for the meat), brussel sprouts in a vegan cheese sauce with crunchy topping, sesame potatoes (mashed pots formed into balls and rolled in sesame seeds), roast pots, skirlie, veg sausages wrapped in veg bacon (all redwood), carrots, neeps and gravy.
Think that is it Grin

Love the sound of the mushroom wellington but nephew has nut allergy so all nuts banned from xmas dinner.

Just to say, asda have a selection of pre mixes for nut roast, sausages, sunflower and lentil roasts etc, good standbys if you are having a single veggie guest.

thisisyesterday - with the wellington you cook the filling assemble the wellys as it is enough to make two (I confess to using bought pastry and not making my own) then wrap in greaseproof paper and foil and freeze. You can then cook from frozen on the day Xmas Smile I cook it with the tatties etc.

My daughters refuse to eat mushrooms, which is a pain as so many veggie recipes use them.

Ummm, i'm pretty sure that sea bass is a fish, and vegetarians and vegans don't really do fish Grin

but like the idea of roasted veg on a roastie, yum

Another advocate of the Cranks mushroom wellington here. As bigmouthstrikesagain says the recipe creates enough filling to make two and it freezes really well. We tend to cut down on the amount of ground almonds in it and just increase some of the other ingredients, as it is a bit too almondy for our taste.

I am the only vegetarian so I will have:

sprouts, cabbage, cauliflower, roast potatoes, bread sauce, peas, carrots, parsnips, vegetarian stuffing and vegetarian gravy.

There is never room on the plate for a 'main event' such as a nut roast (which I consider the work of Satan anyway).

Worldgonecrazy - which vegetarian gravy do you have? I used to have a lovely easy recipe but I've lost it and I've never managed to make or buy a decent veggie gravy since :(

We'll be having some variety of nut roast - I'd prefer a quorn roast but OH doesn't eat quorn.

We have stuffed Portobello mushrooms plus all the usual Christmas trimmings.

Remove stems from mushrooms. Chop and saute a red onion. Approx 150g cheddar cheese/feta/whatever takes your fancy. Pop cheese, onions, mushroom stalks, couple of handfuls of fresh breadcrumbs, couple of handfuls of fresh parsley into food processor, whizz together until 'stuffing' consistency.

Put mushrooms on baking tray, spoon a few tablespoons of stuffing per mushroom, bake for about 20 mins at 200 deg C. Makes enough for about 8 large generously covered mushrooms.

Delicious. These have proven very popular every time I've made them, even with my highly carnivorous DP. You can make the stuffing in advance and chill it in the fridge in a tupperware for a few days and I imagine it would freeze pretty well too, but as it only takes 10 minutes to make I haven't tried freezing it myself.

I'm embarassed to admit my mum makes the veggie gravy. She uses the veggie stock in a green tub with an orange lid if that helps?

I think (from memory) that the gravy is made the same way as meat gravy to start - flour and veggie fat, and with the water from the vegetables, and vegetable stock added, plus gravy browning.

Burnttoffee, you can substitute the meat for a veggie sausage mix (asda do them in a green packet, near the other pulses i think) or Health food stores usually stock ones made by granovita -the linconshire sausage mix is lovely. just make it up according to the packet, then add all the other ingredients that you would usually add. We then cook in the oven in a pyrex bowl covered with foil. Or roll into balls and bake on a tray, they are really yum!

We're having our pre Christmas dinner this coming Saturday as DH's mum and his sisters will be on holiday on the 25th. They're all vegetarian so i decided that i would just cook one meal for all of us (since i'm not that bothered about eating meat).

So we're having Individual Christmas Pies that were in the December issue of BBC Good Food magazine. It's also on their website here

I reckon you could make it Vegan by substituting vegan cream/milk to the recipe. I tested them out a couple of weeks ago and even though i'd never made pastry before they worked a treat. So now i've got a batch of 8 more pies already in the freezer.

And the best thing was that my kids (9 and 6) ate them all up!

Hi Toffee, I make homemade sage and onion stuffing, vegetarian and very tasty.
Gently fry a chopped onion in a generous amount of butter until very soft. Add about half a loaf of fresh breadcrumbs, salt, pepper, 2 tspoons of dried sage (or to taste), a green oxo and an egg and mix together. If the mixture doesn't stick together add some more melted butter. Bake for about 20 mins. Would serve about 8 or stuff one end of a medium turkey.
