Looking for inspiration, somebody inspire me as I'm stuck in a rut of Bolognese and pizza (all they seem to want to eat lately!
What's your failsafe, everybody likes, dinner recipe?

Veggie burritos.
Heat up a tin of black beans with some rice. Spoon into a corn tortilla, add lettuce, salsa and cheese, then roll up.

Salmon tray bake, roasted veg and pasta, macaroni cheese, stir fry with a sort of satay sauce made from peanut butter, hairy bikers sweet n sour chicken

My fastest dinner is also my kids' favourite!

Spicy seafood pasta

Boil spaghetti; in a pan heat quite a lot of olive oil, frozen garlic and chilli (Waitrose), a brick of crab meat from the freezer, finish with frozen parsley (also Waitrose). 10 minutes.

Pesto!! With pasta and chicken/bacon/cheese - anything really,
Fish fillets cooked in foil in oven - with couscous or rice and lots of veg...
I'm definitely trying a couple of these!!

Honey soy noodles, got the recipe from mumsnet and has saved me many a time!

Marinade chicken thighs in 3tbs soy sauce, 3tbs honey, 1 tsp 5 spice

Shove in oven at 180 for 30 mins

Cook noodles, brocolli, pak choi, peppers, sugar snap peas, baby sweetcorn, whatever

Saturday night lazy dinner is frozen scampi with peas and home made potato wedges.

pasta with a carbonara-type coating of egg yolks, creme fraiche and parmesan, with sautéed bacon, mushrooms and sausage meat. You can sauté the stuff in the time it takes the pasta to cook, and then just stir in the sauce.

fish baps - get some white fish fillets, slice into strips, dip in egg, seasoned flour and panko. Shallow fry for a minute each side. Stuff into white baps and eat with a salad.

Pepperoni pasta and garlic bread. I always do this on a Thursday when ds has Cubs. Just boil some pasta, chop up some pepperoni, chuck together with a jar of spicy pasta sauce (tomato and chilli is my face). Top with grated hard cheese.

Egg and chips - eggs are healthy and oven chips are fine

Omelettes

quesadilla - made with wraps grilled with anything you have to hand as a filling (olives, ham, chese etc)

corn beef hash with egg

Jamie Oliver sausage sausage bake - chuck loads of cherry toms, few garlic cloves, some dried herbs into an oven dish. Slosh in loads of olive oil and balsamic vinegar. Mix. Shove in 6 sausages. Mix.
Shove in oven.

I serve with a bagged salad and sliced tiger loaf with butter.

International chicken and rice

Basic recipe is fry sliced chicken thighs/breast with onion and garlic, add stock and a packet of ready cooked rice. You then change the flavourings before you add the rice according to which one you're making so

Chinese - spring onion, soy, chinese leaves, 5 spice powder, cashew nuts
Spanish - red wine, chorizo, peppers, prawns, tomato and paprika
French - white wine, mushrooms, cream, use Uncle Ben's wild rice mix
Middle eastern - add ras-el-hanout, dried apricots, flaked almonds
Mexican - peppers, sweetcorn, taco spice mix
Indian - blob of patak's curry paste, frozen spinach
Italian - tomato, basil, chunks of mozzarella
etc.

Cook everything together then for about 2 mins after the rice is added.

Creamy chicken, it can be used with potatoes, pasta or rice.

Fry chicken pieces, add mushrooms, reduce a glass of wine if you like, add dollops of herb and garlic cream cheese and bit of stock for right consistency. Add handful of frozen peas or swetcorn. It's ready when they're warmed through.

It can be varied to taste, I often put a dried mushroom in, extra garlic and finish with fresh parsley. I keep the mushroms in large pieces because my daughter doesn't like thm and they're easy to fish out.

A favourite in our house at the moment is pasta with Philadelphia cream cheese, peas, chopped fresh mint and either ham or bacon. Dead quick and easy and seems to go down well with kids.

Also fajitas, naan bread pizzas (with Passata, mozzarella, peppers and courgette), tomato and spinach pasta bake, jacket potato with cheese, reduced salt baked beans and a side salad.

Egg, oven chips and salad.
Chicken breasts in roasting bag with spices, or cheat with one of those Maggi ones. Slice and serve with wraps, cheese and salad.
Omelette or frittata and salad. My children love what they call pizza omelette, just before it's time to fold it in half spread tomato pesto or pizza topping, sprinkle with cheese.
Meatball subs and salad. Or any other hot sandwich, put chicken in marinade when preparing previous nights dinner. Fry, grill or oven and serve in bun and salad.
Chicken, egg, soba noodle soup thing. It's a good way to use up leftover roast chcicken and you can make it very filling.

Easy Peasy Pasta - from the TV program 'Bing' I hate Bing but never mind

Boil pasta shapes, add cooked sliced carrot, and peas. It's something they ask for, and like in the program you have to give them a spoon to separate the ingredients or to mix them. I usually stir in a spoon of olive oil.

I prefer to do anything something else, but they like it. They have a school dinner so I can get away with it as an evening meal (or when I'm out of time/ingredients/will to live) and it's good for when none of us want to eat because of the latest virus. The kids will try it because of the game.

Very quick, easy and popular standby in this house was a tin of tuna, drained and flaked, stirred into a warmed up tin of condensed (not diluted) mushroom soup. This was all then mixed with freshly cooked pasta shells or penne, and served with peas. Might sound weird but it's a very tasty mix - the kids loved it - and I still make it now and then.
